Over time, the cast-iron pan only gets better. Its porous structure leads to the fact that gradually a natural non-stick layer is formed on the surface, consisting of absorbed oil.

A cast-iron pan for pancakes requires proper care. Rust may appear on it, therefore it should be protected from moisture, wipe dry and do not forget to calcine before use. Nothing complicated, but the result is always excellent.

However, progress does not stand still. Naturally, people try to make their life easier, including in the literal sense. The heavy cast iron was replaced by an almost weightless pan for non-stick pancakes. It is important to purchase exactly the “pancake” option. Such pans are small in size, but at the same time the bottom and walls are rather thick, which makes it possible to avoid excessive heating of individual sections. However, all the same, the pancake oven on them follows on a small fire, since not a single non-stick coating can tolerate the effects of very high temperatures, especially for a long time. The biggest nuisance is not even that it starts to crack. The fact is that when the integrity of the surface is violated, this coating gradually evaporates, that is, it enters the cooked product. Who wants to try pancakes with teflon? Therefore, when purchasing a pan with such a coating, do not forget to buy a special spatula that does not scratch, and never clean it with powders.

In conclusion, I would like to recall another type of frying pan - aluminum. It’s not worth talking about them for a long time, it’s enough to note that they are absolutely not suitable for baking pancakes. You should not even try, the results will definitely disappoint you.
