Butter dough is considered to be an excellent base for making homemade cakes. Soft pies, cakes and other goodies are made from it. In today's publication, we will take a closer look at several popular recipes for buns.
With cottage cheese
This sweet treat will become a real find for women whose children adore home-made cakes, but flatly refuse sour-milk products. To prepare it, you will need:
- 125 g ghee.
- 300 g of granular cottage cheese.
- 250 g of cane sugar (preferably fine).
- 150 ml pasteurized cow's milk.
- 50 g steamed raisins.
- 2 eggs.
- 12 g of yeast (compressed).
- 400 g of high-grade flour (wheat).
- Orange.
- Salt.

Making these buns from yeast dough is so simple that any newcomer can easily cope with this task. You need to start this process by creating a dough. To obtain it in a deep container, yeast, warmed milk, a couple of spoons of flour and a quarter of the available sweet sand are combined. All this is briefly cleaned in a warm place, and then supplemented with melted butter, beaten egg, a pinch of salt and another 75 g of sugar. All this is thoroughly mixed with flour and left to come. After a couple of hours, a layer is rolled out of the risen dough and circles are cut out. Each of them is filled with cottage cheese, mashed with chopped orange zest, the remnants of sweet sand and steamed raisins, and rolled into a ball. Ready-made buns are spread on a baking sheet, smeared with a beaten egg and subjected to heat treatment. Bake them for about 20 minutes at 180 ° C.
With sour cream
These sweet products are baked on the basis of yeast dough mixed in a dough. They are very lush and do not lose their original softness for a long time. To make such buns with raisins, you will need:
- ½ tbsp l yeast (high-speed).
- 1 tbsp. l high-grade flour (wheat).
- 1 tbsp. l sugar (crystalline).
- ½ cup milk.
All of the above ingredients will be needed to make dough. To complete the process of making dough for pastry with raisins, you will need:
- 100 g of oil (melted).
- 2 cups whole milk.
- 3 tbsp. l any vegetable oil (odorless).
- 1.5 cups of sugar (crystalline).
- 1 kg of high-grade flour (wheat).
- 2 selected chicken eggs.
- ½ cup sour cream.
- 4 handfuls of raisins.
First you need to do dough. In the right amount of warmed milk, yeast, sugar and flour are dissolved. All this is kept in a warm place until a significant increase in volume. After a short time, the risen dough is poured into a container in which there is already heated milk, beaten eggs, granulated sugar, sour cream, vegetable and melted butter. All this is thoroughly kneaded, gradually adding oxygen-enriched flour and raisins. After a couple of hours, the neat buns are formed from the risen dough and baked for 15 minutes at 200 ° C.
With cognac and vanilla
The basis for the preparation of these sweet buns will be yeast-free dough. To knead it you will need:
- 0.5 kg of high-grade flour (whole grain).
- 300 ml of yogurt (fatty).
- 5 tbsp. l cane fine sugar.
- 70 g of high-quality oil (soft).
- 2 tbsp. l good brandy.
- Vanillin, soda, raisins and salt.
The process of making such sweet buns does not take much time. First, sieved flour, softened butter, cognac, quicklime, salt, sugar and yogurt are combined in a deep bowl. All this is supplemented with pre-steamed raisins and mixed thoroughly. From the resulting dough, neat buns are formed, laid out on parchment and baked for about 25 minutes at 180 ° C.
With poppy seeds
According to the method described below, very soft buns with milk are obtained. They have a pleasant taste and a light citrus aroma. To prepare them you will need:
- 350 g of high-grade flour (wheat).
- 60 g of oil (softened).
- 70 g of sugar.
- 3 selected chicken eggs.
- 1 tsp yeast (high-speed).
- 100 ml cow's whole milk.
- 2 tbsp. l dry poppy.
- Salt, vanilla and lemon zest.
To bake rich buns from yeast dough, you must strictly adhere to the proposed algorithm. First you need to do milk. It is heated and supplemented with yeast and a little sugar. Five minutes later, melted, but not hot oil, citrus zest, a couple of eggs, salt, the remaining sweet sand and vanilla are added to the resulting solution. All this is mixed with oxygenated flour and wait until it fits. After a short time, neat buns are formed from the dough that has increased in volume, greased with whipped yolk, sprinkled with poppy seeds and baked for 35 minutes at 180 ° C.
With kefir
Butter buns made from yeast dough, baked according to the recipe described below, will be a great addition to evening gatherings over a cup of fragrant tea. To prepare them you will need:
- ½ cup milk.
- 15 g of yeast (compressed).
- 1 tsp cane sugar (crystalline).
- 3 tbsp. l high-grade flour (wheat).
All these components are part of the sponge. For the final kneading of the dough, from which sweet lush buns will be formed, you will need:
- A glass of kefir (any fat content).
- 2 selected chicken eggs.
- 2/3 cup sugar.
- ~ 4 cups of flour (wheat).
- ½ pack of soft butter.
- Salt.
The yeast is ground with sugar, supplemented with flour and poured with slightly warmed milk. After some time, beaten eggs, sweet sand, salt, kefir and melted, but not hot oil are added to the rising dough. At the final stage, all this is mixed with oxygen-enriched flour and removed to heat. As soon as the dough increases in volume, buns are formed from it and baked until an appetizing golden brown crust appears.
With rye flour
These unsweetened buns have an interesting taste and a beautiful shade. To bake them you will need:
- 0.5 kg of flour (rye).
- 1.5 cups of whole milk.
- 0.4 kg of flour (wheat).
- 2 raw eggs.
- 6 tbsp. l soft butter.
- 10 g of yeast (high-speed).
- 2 tsp salt.
In slightly heated milk, yeast and rye flour are bred. The resulting solution is briefly placed in heat. After some time, the risen dough is supplemented with eggs, soft butter, salt and wheat flour. All are thoroughly kneaded by hand and left to fit. After about an hour, the same buns are formed from the enlarged dough and baked at medium temperature until lightly browned.
With nuts
According to the technology discussed below, very aromatic rich buns are made from puff pastry yeast. To prepare them you will need:
- 1.2 kg of flour (wheat).
- 150 g of fine sugar.
- 500 ml whole cow's milk.
- 5 eggs (3 in the dough, the rest for lubrication).
- 60 g of yeast.
- 500 g butter (350 g per dough, the rest for lubrication).
- Nuts, salt and powdered sugar.
Yeast is dissolved in half the available warmed milk. Sweet sand and part of the sifted flour are poured there. After some time, pre-beaten eggs, salt and leftovers of milk are added to the dough. All this is mixed with oxygen-enriched flour and removed to heat. The raised mass is rolled out with a layer, smeared with oil, folded with an envelope and briefly sent to the refrigerator. This procedure is repeated three more times and only after that proceed to the formation of rolls. The resulting products are left for proofing, greased with beaten eggs and butter, and then sprinkled with nuts and subjected to heat treatment. Buns are baked in an oven, heated to a moderate temperature. Browned items are decorated with sweet powder.
With fill
These delicious and lush buns will be appreciated by even the most fastidious eaters. To bake them you will need:
- A glass of milk (pasteurized).
- 35 g of yeast (compressed).
- 2 tbsp. l fine sugar.
- 2 raw egg yolks.
- 0.4 kg of flour.
- Salt and vegetable oil.
To make the fill, you have to additionally prepare:
- 100 ml cream (fatty).
- 2 tbsp. l Sahara.
- ¼ packs of oil.
- Vanillin.

First of all, do dough. For its preparation, yeast, salt, sugar and a spoonful of flour are diluted in 100 ml of slightly heated milk. All this is cleaned in heat for fifteen minutes. After the designated time has elapsed, egg yolks and the remaining milk are added to the foaming dough. In the next step, the future dough is mixed with pre-sifted flour and left to come. After about an hour, small pieces are nipped off from it and given the desired shape. The resulting products are transferred to a greased baking sheet and removed for proofing. Then they are placed in a heated oven. Fifteen minutes later, future buns are poured with a mixture of heavy cream, sugar, melted butter and vanillin and quickly returned to the oven. The readiness of products can be judged by the presence of a delicious crust. Lovers of muffin with filling can be recommended to fill the rolls with fruit jam, marmalade, thick jam, apples, combined with cinnamon, nut or chocolate paste.
