What is ganache?
This dish belongs to the French cuisine and is a delicious chocolate cream. The classic ganache recipe includes cream, dark chocolate, and butter. Depending on the purpose, the cream is made more or less thick.
So, if you plan to cook truffles or icing to cover the cake, it is recommended to make the ganache thicker, and for the interlayer - more liquid. Despite the presence of a classic recipe, most housewives experiment with various ingredients, finding a combination that best suits their taste. Therefore, today we suggest considering several options for preparing this dish.
Classic ganache recipe
To prepare this delicious cream, we need the following products: 200 grams of dark chocolate (it is desirable that the cocoa content in it be at least 60%), 120-200 grams of cream with 35% fat content (this amount will depend on the desired ganache density), 50 grams butter and a tablespoon of powdered sugar (you can more if you are a sweet tooth).
First of all, you need to break the chocolate into pieces. Pour the cream into a ladle or a small saucepan and heat it in a water bath, without bringing to a boil, then remove. Add the pieces of chocolate to the warmed cream and leave for 5-7 minutes. If during this time the chocolate did not have time to soften, then you need to hold the saucepan a little longer in a water bath. Using a whisk, thoroughly mix the cream with chocolate and add the powdered sugar. Allow the mass to cool slightly, and then add the butter. Knead well again until the contents of the saucepan become homogeneous. Delicious cream is ready!

Raspberry Cake Recipe
If you want to treat yourself and your household or guests with a delicious dessert with an exquisite taste, then try to cook this dish.
For the test, we need the following ingredients: 100 grams of butter (cold), 150 grams of ordinary and 50 grams of almond flour, 20 grams of brown sugar, one chicken egg and 4 grams of salt. In order to cook ganache, you need to stock up on the following products: 180 ml of cream (at least 33% fat), 300 grams of white chocolate, 170 ml of olive oil, vanilla pod and coarse sea salt or cereal (for example, Maldon). For the filling, we also need 300-400 grams of fresh raspberries. This amount of ingredients is designed for a baking dish with a diameter of 20-22 centimeters.
Cooking dough
First, cut the cold butter into small pieces and put it in a blender bowl. There we add the sifted flour and salt. Grind to a state of small crumbs. Add almond flour and sugar and grind again. Pour the resulting crumbs into a bowl, add the egg and quickly collect the dough into a bowl until the butter begins to melt. Immediately after that, we roll it out on a sheet of baking paper pre-sprinkled with flour. The thickness of the dough should be approximately 3 mm. We cover it with another sheet of paper and put it in the refrigerator for an hour.

After that we take out the dough, roll it to the required thickness and put it in a baking dish. We cover it with a heat-resistant film (an ordinary baking sleeve is also suitable for this purpose), we fill it with rice or other small grains and again send it to the refrigerator for 30-60 minutes. After baking the dough in a pre-heated oven to 170 degrees, the oven for 10 minutes with rice and 15 minutes without it. We give a ready basis to cool down well.
We proceed to the preparation of the cream
This ganache recipe differs from the classic one in that it uses not black, but white chocolate. This gives the cream a special taste and piquancy. So, grind the chocolate and put it in a tall glass or bowl from a hand blender. Pour the cream into a bowl and add the seeds and the vanilla pod itself . If this is possible, then let them brew overnight, if not, then heat the mixture to a boil, cool for 15 minutes, bring it to a boil again and pour it into chocolate.
Using a spatula, gently mix until a homogeneous mass is formed. Dip the blender into the mixture and pour in a thin stream of olive oil. At the end, add salt to taste. As you can see, this ganache recipe is very simple, but its taste exceeds all expectations.
