One of the most expensive delicacies in the world is truffle, an underground mushroom of an unprepossessing appearance, but an amazing smell and taste. He is literally valued at its weight in gold. And also from this mushroom got its name for the outward resemblance of famous sweets. They were extremely popular in the Soviet Union, and during the shortage, when it was very difficult to find these sweets, the housewives got the hang of making truffles at home. The recipe could contain powdered milk or infant formula. Let us and now we will try to make the famous French delicacy ourselves, even in several ways, so that everyone can choose to taste.

Simple Truffles, Recipe One

We need: a pack of butter, a pack of "Baby" (baby food), half a glass of milk, 2 cups of sugar, cocoa (250 grams per recipe and separately for sprinkling).

Put butter, sugar, milk in a saucepan, mix everything, bring to a full boil and remove from the stove. Mix three tablespoons of the Baby formula and cocoa to sprinkle the future truffle, pour the rest with cocoa into the milk-butter mass and knead until smooth. From the finished mass, form sweets in the form of balls, roll in a mixture of cocoa and "Baby" and send for a couple of hours in the refrigerator.

Chocolate Truffles Recipe Two

For the recipe you need: 300 gr. chocolate, half a glass of 20 percent cream, 100 grams of sugar, 3 yolks, 100 grams of butter, unsweetened cocoa for sprinkling.

Put the chocolate broken into pieces into the water bath when it starts to melt, add cream, butter and sugar, stir quickly until smooth, then remove from heat and stir in the yolks. Refrigerate for 3 or 4 hours. When the dough is ready, form small balls and roll in cocoa mix. Then send back to the refrigerator for several hours.

Almond Truffles, recipe three

Such products are needed: three tablespoons of butter, 90 grams of almonds, 2 tablespoons of sugar, 60 grams of cookie crumbs , almond aromatic essence, chocolate chips, rum or cognac.

Rub the butter and sugar thoroughly, add crushed almonds, cocoa, essence and, if desired, aromatic alcohol. Knead thoroughly together until smooth, roll into a sausage, cut into slices, form sweets, roll them in chocolate chips and leave them in the refrigerator for a couple of hours.

How to Make Milk Powder Truffles

The following ingredients are needed: 200 grams of milk powder, 100 grams of cocoa, 250 grams of sugar, 120 grams of water, 180 grams of butter.

From sugar, oil and water, boil the syrup of the consistency of liquid sour cream. In a separate bowl, mix the powdered milk and cocoa, gradually pour the syrup into this mixture, without stopping stirring. Send for a couple of hours into the freezer, then form balls from the frozen mixture and sprinkle them in cocoa. Truffles prepared in this way are best stored in the freezer and taken out an hour before serving.

And a few more tips on how to cook truffles correctly:

1. In order for truffles to form better, you need to moisten your hands a little in cold water.

2. You can add rum, brandy, sherry or liquor to the truffle for flavor. The main thing is not to overdo it!

3. Inside each candy can be hidden almonds, hazelnuts or cashews, berries, for example, dried cherries, marmalade.

4. It is good to use cocoa powder, chocolate chips, crumbs from cookies or waffles, crushed nuts or any combination of truffle sprinkles.
