Winter harvesting is an excellent option to preserve vegetables and enjoy their taste in the cold season. Easy to prepare and tasty will be a snack of cucumbers for the winter. Products required for preservation:

  • fresh cucumbers - 3 kg (choose not very large and even fruits);
  • peeled garlic cloves weighing 100 grams;
  • fresh parsley - a bunch of 30 grams;
  • granulated sugar - a glass without a slide (about 200 grams);
  • salt - 3 tbsp. spoons with a slide;
  • a third glass of vinegar (6 or 9%);
  • vegetable oil and onion can be added if desired.

Technology

An appetizer of cucumbers for the winter is prepared as follows. First, cucumbers must be cut into circles. Grind parsley, squeeze the garlic through a press. Put the ingredients in a separate container, mix, sprinkle with salt, sugar, pour vinegar. Stir and marinate for 12 hours. Prepare sterilized jars. In each of them you need to put a tablespoon of oil (you can do without it), ram the cucumbers and close the nylon covers. Cucumber appetizer is stored in the refrigerator or cellar for the winter. If you decide to add the onion, then it should be laid before the pickling stage.

The second method of preparing snacks from cucumbers includes cucumbers, carrots, onions, garlic, dill and allspice. The number of vegetables can be changed in accordance with the desire and taste preferences. For marinade you need to take:

  • clean drinking water - 3 liters;
  • a third of a glass (150 grams) of salt;
  • 1.5 cups (300 grams) of sugar;
  • 2 cups (400 ml) of vinegar 9%.

Cooking technology

This recipe for fresh cucumber snacks preserves. The indicated amount of marinade is enough for 6-7 liter containers. All ingredients are laid out in layers. In dry and clean jars, place chopped dill, a couple of peas of allspice and 2 cloves of garlic. Then lay the cucumbers, sliced ​​in circles. The next should be a layer of grated or chopped carrots. The final layer will be a layer of onion, chopped into rings / half rings. Alternate the ingredients until the container is full.

After that, tightly tighten the salad with lids and turn the jars upside down. Wrap them in a thick cloth, leave them in this position until the salad has completely cooled. Then put the cans away for the winter in the cellar, basement or closet. The appetizer can be served as a salad for the second meat and fish dishes.
