- Broth - 100 ml.

- Vinegar - one tablespoon.
- Margarine or butter - one pack.

How to cook
- Choose any meat based on your own taste. Prepare it for processing and then chop finely. Salt it, season with ground pepper, mix well and place in the refrigerator for several hours.
- Next, prepare the dough. To do this, pour two cups of sifted flour into a bowl and mix it with frozen grated margarine or butter grated with a coarse grater. Grind food into crumbs with your hands.
- Add milk and sour cream, as well as vinegar, to the bowl. Knead the dough, gradually adding one glass of flour to it. Note that at first it will crumble in your hands, but then it will begin to stick together.
- Blind the dough into a lump and refrigerate for one hour.
- The classic quartet is made from puff pastry, so we need to work with our workpiece. So, when it cools (after about 20 minutes), remove it from the refrigerator and roll it into a thin layer. Fold it in an envelope and return to the cold. Repeat this operation several times.
- Peel and chop the potatoes with very thin slices. You can use a special knife or a knife for peeling vegetables for this purpose.
- Unhook the onion and cut into half rings.
- Take a deep baking dish and oil it.
- Divide the dough into two unequal parts. Roll out a large one and put it on the bottom of the form. Please note that your workpiece should also be enough for the sides.
- After that, you can lay out the filling. Put the meat first. If it is too lean, or you use chicken, you can add a few pieces of butter.
- Put the potato in the second layer - it should be salted and pepper.
- The last layer is chopped onion.
- Roll out the remaining dough, cover it with the filling and pinch the edges. Make a small hole in the middle with your fingers.
- Beat the yolk and grease the surface of your cake with it. Plug the hole with a peeled onion.
- Place the cake in the preheated oven for 20 minutes. When the specified time passes, it should be removed and pour into the middle of the broth. Close the hole with the onion again and send the quartet back into the oven. Repeat the last operation after half an hour.
If the potato is not ready in an hour, then you can add the broth, cover the pie with foil and bake it for some more time. You can get the filling and try through the central hole.

This delicious meat pie is the pride and hallmark of Tatar cuisine. This time we will cook it from chicken, potatoes, onions and puff pastry. Ready-made pastries are juicy, hearty and fragrant. Of course, you can buy ready-made dough in the store, but the home version of this product will be much tastier. So, what ingredients will we need:
- 600 grams of wheat flour.
- 200 ml of water.
- One chicken egg.
- A tablespoon of vinegar (9%).
- 300 grams of chicken.
- Six potatoes.
- Two onions.
- Half a teaspoon of zira.
- A teaspoon of salt and ground pepper to taste.
Process description
Quartet pie, the recipe of which we will describe below, is prepared very simply:
- Chop the frozen margarine with a knife, and then grind it with 150 grams of flour with a wooden spoon.
- Break the chicken egg in a bowl with crumbs, add salt, vinegar and water.
- Knead the dough, gradually adding the remaining 150 grams of flour. After that, send it to the refrigerator for half an hour.
- Peel the onions and potatoes, and then cut the vegetables and 300 grams of chicken into cubes. Combine the products in a large bowl, add salt and spices, mix.
- Divide the dough into two parts and roll. Put a larger layer at the bottom of the mold and blind the sides.
- Lay out the filling and carefully level it.
- Put the second half of the dough on top of the pie in the form of a lid. Connect the edges and make a round hole in the center.
- Lubricate the cake with a beaten egg and put it in the oven for one hour.
When the quartet is ready, remove it from the oven, cool slightly, cut and serve.
