Steamed Carrot Cutlets

Vegetable cutlets are an excellent dietary dish. They are very diverse, they can be made from various vegetables. For example, from carrots.

If you often squeeze carrot juice, then, of course, you still have a lot of cake. It can also be used for their preparation.

One of the simple recipes for cooking is steaming. You can cook steamed carrot cutlets in a double boiler, if not, in a colander installed in a pot of boiling water.

Vegetable cutlets are sculpted both in the traditional way, and with various fillings from cheese, cottage cheese, apples, beets, cabbage, etc. By incorporating such cutlets into the daily diet, it is easy to diversify your daily table, without a lot of time and effort.

So, to make carrot cutlets for a couple, you will need: a kilogram of fresh carrots, half a glass of milk, the same amount of semolina, 3 eggs, a teaspoon of sugar, vegetable oil, salt.

Carrots need to be peeled and rubbed on a very fine grater or in a blender and transferred to a deep roasting pan or saucepan.

Pour a pinch of salt, granulated sugar, a tablespoon of oil. Mix everything well.

Pour a little warmed milk into the mass, bring everything to a boil and simmer over low heat until cooked.

Then pour semolina (if there is not enough liquid, add some more milk) and boil for another 10 minutes.

Then remove the pan from the heat.

Introduce whipped yolks, mix well, cool.

From the resulting cutlet mass we sculpt cutlets.

It is necessary to boil a kilogram of carrots, pour boiling water over 200 g of prunes for 20 minutes. Boiled carrots should be passed through a blender, first peeling off the skins. Cut steamed prunes and add it to the carrots. Continuously mixing, add proteins from 4 eggs and a tablespoon of semolina. Mix well. Cook, as in the previous recipe. Such cutlets are good to use for breakfast or as a dessert with kefir or low-fat yogurt.

You will need:

half a kilo of carrots, a slice of fresh ginger root, one protein, 2 slices of white bread, 3 tablespoons of almond petals, salt, pepper.

For the sauce you will need:

200 g of not very fat cottage cheese, one and a half teaspoons of curry, 125 g of yogurt (natural), salt.

Ginger and carrots should be finely rubbed. Squeeze carrot mass slightly from excess liquid. Fry almonds in a dry skillet. Soak white bread briefly in water.

Mix ginger with carrots, add a little squeezed bread, almond petals, protein and mix everything thoroughly.

Form cutlets from the resulting mass, cook in a double boiler as in previous recipes.

For the sauce, mix yogurt with cottage cheese, season with salt and curry, mix thoroughly.

Serve this dish with a green salad.

However, carrot cutlets without eggs are considered one of the most delicious, healthy and tender.

You will need:

A pound of carrots, 50 g semolina, a teaspoon of sugar, seasoning.

Boil the carrots for 20 minutes after the water boils, until soft. Then it must be cleaned of skins, cut off the ends, grate on a fairly fine grater or scroll through a meat grinder.
