  • Sweet pepper - 1 kg.
  • Onion - 400 g.

  • Sunflower or olive oil - about 100 ml.
  • Vinegar - 1 tbsp. l
  • A bunch of greens (preferably parsley).

  • Cinnamon - 1/2 teaspoon.

Practical part

All vegetables should be washed and peeled, tomatoes chopped randomly and boiled for 15-20 minutes, then chopped with a blender until smooth. Meanwhile, fry the onion, chopped into small cubes in a saucepan, add chopped sweet pepper, then zucchini. After some time, pour the vegetable mixture into tomato and simmer for half an hour. At the end add the finest chopped remaining ingredients, wait for the dish to cook, pour the vinegar into the total mass and turn off the fire after a couple of minutes. You can roll zucchini in tomato sauce for the winter right in this form, or you can grind everything with a blender until smooth.

Spicy sauce

For lovers of savory preparations, spicy zucchini sauce for the winter will be an indispensable recipe. A half-liter jar will require ingredients such as:

  • 2 zucchini.
  • 3 tomatoes.
  • 1 hot peppercorn.
  • 1 tsp of salt and sugar.
  • 1 tbsp. l of acetic acid.

All vegetables must be cleaned of dirt and peel and chopped using a meat grinder or blender. Pour salt and sugar into the mass, garlic can be added if desired. In a pan with a thick bottom, you need to wait for it to boil, cover with a lid and boil for 20 minutes at minimum heat, until the color changes completely. Then it is better to beat the mass again with a blender to a pasty state, add vinegar and boil for another five minutes.
