In fact, the salting of cherry tomatoes is practically no different from the preparation of pickles with ordinary tomatoes. Some housewives use time-tested recipes with absolutely all varieties of this vegetable, but some of them are not suitable for processing small cherry.
Classic Pickled Cherry Recipe
In addition to tomatoes, you will need to prepare the onion, herbs (parsley and celery), a few leaves of horseradish and blackcurrant, black peppercorns, dill, capsicum and a few cloves of garlic. Next, you should prepare the marinade, hoping that for each liter of water you need 3-4 leaves of parsley, 1.5 tbsp. tablespoons of salt, 2 tbsp. tablespoons of sugar, 3 tbsp. tablespoons of 6 percent vinegar and cloves.
It will be necessary to sterilize all cans for blanks, boil all the available lids, and also rinse the greens. In each of the jars you will need to put a clove of garlic, a ring of hot pepper without seeds, 7-8 peppercorns, dill, celery, parsley and a few leaves of horseradish and currant.
We process tomatoes
Cherry should be slightly immature, they will need to be pierced in several places at once next to the peduncle with the help of toothpicks, then they will not crack at the time of pouring. After that, they need to be put in jars, and covered with greens on top. Then it is necessary to fill the contents of the container with boiling marinade.
You just need to cover the tomatoes and leave for about ten minutes. As soon as the appointed time expires, the water must be poured into another container, add a mixture of sugar and salt, then boil again. Vinegar will need to be poured into the resulting liquid, add bay leaves and cloves, and then pour it into containers. Banks need to roll up, turn over and cover with a warm blanket. Cherry tomatoes are ready for the winter! Wait for the cans to cool, and then put them in a place to store.
Sugar Cherry and their recipe
Few know how to cover cherry tomatoes for the winter, but want to learn how to do it. The reason for this lies in the recipe for "sugar" tomatoes. To make them, you will need 2 kilograms of vegetables, 2 cups of sugar, 6 garlic cloves, 4-5 peppercorns, stalks and umbrellas of dill, a couple of bay leaves, two tbsp. l salt and 2 tsp. mustard seeds. For marinade should use 5 tbsp. l sugar, 3 - wine vinegar (preferably red), 1 - salt (per 1 liter of water).
Then you need to rinse the tomatoes, process them at the peduncle with a toothpick and place in a three-liter jar. After you need to fill the tomatoes with water, let the liquid cool, then drain it and repeat the process. While the water is cooling, you can cut the cloves of garlic along, thoroughly wash the dill and put together with spices in a jar.
The next step is to pour water into a pan with salt and sugar, bring the mixture to a boil, pour vinegar into it and mix. Then you need to fill the resulting marinade with tomatoes, roll up the cans, then put them on its head and wrap it with cloth. Pickled cherry tomatoes are ready! Honey cherry
Cherry tomatoes can become an original dish in the winter season (recipes for winter are easy to execute), the main thing is to use high-quality tomatoes to create harvestings. Cherry marinated with honey is popular. To prepare them, you need a kilogram of tomatoes, 70 ml of apple vinegar, a branch of basil and dill, a piece of hot pepper, a couple of bay leaves, a few peas of black pepper, 5 cloves of garlic, a tablespoon of sugar and salt and a couple tablespoons of fresh aromatic honey.
How to close cherry tomatoes with honey
Tomatoes will need to be pierced in several places near the stalks, then put them in a jar along with peppers, garlic, dill and bay leaves. Two liters of water will need to be brought to a boil, then pour salt and sugar there to taste. The resulting liquid must be filled with tomatoes and left for an hour.
Then you will need to pour the brine into the pan, boil it, add honey, vinegar and basil. The mixture should be filled with tomatoes, then the banks must be rolled up and the brine allowed to cool. Once this happens, you can put the cherry in a cool place. Two days later, the pickle will be ready.
Cherry marinated in tomato juice
Cherry tomatoes, harvesting for the winter of which does not require excessive effort, can be rolled up in your own juice. The marinade is created as follows: in each liter of juice, you need to add three tablespoons of 9% vinegar, 2 tablespoons of sugar and 1 - salt, a little onion, bell pepper, cloves, allspice.
You need to add all the spices to the juice, boil the liquid, then remove it from the stove and pour vinegar into it. Next, put tomatoes in jars, sliced ββonion and pepper rings, pour boiling water over the contents of the containers and leave for five minutes. Then you need to pour water from the cans, and then immediately pour the tomatoes with hot marinade and roll up.
Tomatoes with Onions and Peppers
Another wonderful recipe is pickled cherry with onions and bell peppers. It will take 1.5 kilograms of tomatoes, onions, bell peppers, peas, cloves, garlic and herbs. Marinade is made as follows: three tablespoons of sugar and lemon juice (you can use vinegar) is mixed with 1.5 tablespoons of coarse salt and dissolved in a liter of water.
Next, you need to rinse the tomatoes, prick them at the stalk, put in jars so that they alternate with pepper, onion, spices and herbs. After this, you need to pour the contents of the cans with boiling water, and after 5-7 minutes pour the water into the pan. Then you need to add the components for the marinade, boil the contents, pour the cherry on them and roll up the jars.
Tomato storage
