Favorite food - pancakes with salmon and not only

Probably there is no such person on earth who would not like pancakes. Why on earth? Because this dish is known in the kitchens of almost all countries of the world. Of course, everywhere they cook and eat in different ways, but the essence of this does not change. In Russia, pancakes appeared in the 9th century, they were introduced by the Vikings. Until now, in the countries of Scandinavia, pancakes are almost a national treasure. However, in Russia, pancakes have taken root to such an extent that now we can give odds to any Scandinavian, and no one dares say that pancakes are not Russian cuisine. Russian pancakes are always insanely tasty, festive and very home-like.

Of course, the filling for pancakes, in fact, can be anything: it is minced meat fried with onions, and cottage cheese, and mushrooms, but pancakes with salmon are especially fond of. Whatever way they are prepared, it will always be very tasty, elegant and, at the same time, simple. It takes very little time to prepare this dish. Here, for example, such pancakes with salmon and curd cheese. To prepare five pancakes, you need to mix well with a whisk or beat: 1 egg, 1 tablespoon of vegetable oil, 200 g of flour, add sugar and salt to taste, and pour a little low-fat milk. Add it until the dough acquires a semi-liquid consistency and begins to drain easily enough from a spoon. If desired, finely chopped fresh dill can be added to the dough.

Next, five pancakes are fried in a pan greased with fat. When the pancakes have cooled, spread them with cheese, put slices of salmon on top (you can take slightly salted trout). Pancake stuffed with roll and cut. Put the slices nicely on the dish. Top each piece can be decorated with red caviar or sour cream. A little tip: before you cut the pancakes with salmon and cheese, hold them for 2-3 hours in the refrigerator so that they do not unfold.

If you want hot pancakes, you can make the filling a little differently: mix the cottage cheese (150-200 g) through a sieve, mix with finely chopped dill and the juice of half a lemon. Put this mixture on a hot pancake with a strip, lay the pieces of fish on top and wrap it in a tube.

If you do not want to bother with the dough, pancakes with salmon can be replaced with tartlets. These baskets are usually sold ready-made, so all you need is to buy them in the required quantity and simply fill them with the filling. Tartlets with salmon are cooked very quickly. For 20-30 pieces of ready-made tartlets from puff pastry, you will need 100 g of salmon, some soft cheese, chopped dill and 50 g of red caviar. We spread the pieces of cheese on the bottom of the tartlets, put slices of salmon on top, garnish with red caviar, lightly sprinkle with dill and ... serve.

Alternatively, you can cut the salmon fillet into small pieces and, giving them the shape of a rose, place in a tartlet. Garnish with a piece of butter and a sprig of greens.

An excellent and original table decoration can be salmon canapes. This light meal is prepared as follows: for 7 slices of white bread you will need 50 g of cream cheese, one medium-sized cucumber and 150 g of salmon. Cut the fish into small thin strips, cucumbers - into circles. From slices of bread also cut small circles and fry them a little in butter or in a toaster. Smear bread circles with cheese and put on top a piece of cucumber. Slices of salmon also cover with a small amount of cheese, roll them into rolls and put on bread and cucumber blanks. Canapes with salmon ready. For convenience, you can stick a skewer into each canape.

These absolutely simple dishes cannot be ruined. They are prepared quickly, and variety is guaranteed for your holiday table. One cannot but agree that salmon and red caviar are not those products that we are accustomed to consume daily and in large quantities, but when the soul asks, even demands a holiday, why not treat yourself and your loved ones with something like that?
