How nice to wander through the woods and bring home a whole basket of mushrooms. After the necessary treatment, they are most often salted. But those who tried to dry them know how many dishes can be prepared with them. Mushrooms have a specific smell, taste and high nutritional value, for which they are also called "vegetable meat". Their most important advantage is a large supply of protein. This is especially true of dried mushrooms, from which you can cook soups, prepare fillings for pies and pancakes, make caviar.
Dried mushroom soup turns out to be tasty, nutritious and very satisfying. Before cooking, they should be poured with water or milk and let them brew for about an hour. During this time, the mushrooms swell and become like fresh.

Dried mushroom soup
Essential ingredients for the soup: two onions, 20 dried mushrooms, a couple of tablespoons of butter, parsley, dill and salt.
Preparation: first, thoroughly rinse the mushrooms, if necessary, peel and boil in salted water. Cool the prepared mushrooms and cut into thin strips. Finely chop the onion, combine with the mushrooms and lightly passer. In the pan where the mushrooms were cooked, add butter, put on fire and warm up a little, but just do not bring to a boil.
Put mushroom roasting in plates, pour hot broth and sprinkle with chopped greens on top. Dried mushroom soup is ready. Serve it better with sour cream.
Dried Mushroom Chicken Soup
We will need: 50 grams of dried white mushrooms, a small chicken, two tablespoons of flour, medium carrots, two egg yolks, two tablespoons of butter, two onions, an incomplete glass of heavy cream, salt.
Preparation: We wash the chicken, cut into portions and cook for about an hour, without forgetting to descale. Peel one onion and carrot, cut in half and bake in a dry pan, about three minutes on each side. Add the baked vegetables to the pan and cook for about half an hour.
Then we take out the pieces of chicken, and filter the broth.
Pour dry mushrooms with water, leave for ten minutes and drain the water.
Pour half a liter of water into a small saucepan and, after boiling it, throw the mushrooms and add salt to taste. Cook for 15 minutes, then filter. Mushrooms cut into cubes.
We take the second onion, peel, finely chop and lightly fry in oil. After that, add the flour and stir everything thoroughly. Add a little chicken broth and grind the whole mixture through a sieve.
Pour the mushroom broth into the chicken stock , add the yolks and cream. Bring the dried mushroom soup to a boil and remove from the stove.
Fragrant soup served with chicken, chopped herbs and small crackers.
Dried Mushroom Caviar
We will need: 100 grams of dried mushrooms, onion, carrots, a clove of garlic, one egg, two tablespoons of vegetable oil, a tablespoon of olive mayonnaise, pepper and salt.
Preparation: put the mushrooms in a cup, pour warm water and leave for an hour. Then we drain the water, wash the mushrooms under running water and cut.
Thinly chop the onion in half rings, cut the carrots into cubes and chop the garlic. Boil the hard boiled egg. We put a frying pan with oil on the fire and fry the carrots, onions and garlic. After about seven minutes, we spread the chopped mushrooms to the vegetables and fry for a few more minutes. Put the fried vegetables in a blender, add the egg, salt and a little pepper. Grind everything to a homogeneous mixture, add mayonnaise and mix thoroughly.
You can make sandwiches from mushroom caviar or use it as an independent dish. The caviar is very tasty and beautiful.
