There are a lot of ways to cook chops, but chops in batter are especially popular.
Batter is a liquid consistency dough into which products are dipped before frying. Translated from French, "batter" means "liquid." It may be of different consistency, but the main thing is that it is viscous and does not drain off the product in deep fat.
You can make batter in milk, mineral water, beer, vodka, cognac or wine. Vodka, beer, mineral water and white wine give the chops a beautiful crisp. Milk batter is denser, looks like pancake dough and is not as crispy and light as beer. The main thing here is not to overdo it with flour, otherwise it will look like an ordinary dough, and the crust will be dense.
Chopped in batter - a very tasty and not very healthy dish due to the large amount of fat. But occasionally you can still pamper yourself. Chops, pork, beef or fish chops in batter are tender, juicy and aromatic, as the crust prevents the juice from flowing out.
Meat chops "Tender"
We need: a pound of pork or beef tenderloin (the neck is best), spices for meat, a couple of eggs, 250 gr. sifted flour, 0.5 l of light beer, salt.
Cut the pork or beef tenderloin into pieces 1 cm thick, beat off well, sprinkle with spices and leave to βrestβ. It is better not to salt the meat: it will give juice, and the batter will drain.
We prepare the batter: beat beer, eggs, flour and a pinch of salt thoroughly, add salt and send the resulting mass to the refrigerator. The batter should be cold during frying, then a delicious crust forms.
We well heat the pan with vegetable oil or fat, dip the pieces of the chopped meat into the existing mixture and send them to fry on both sides to a dark golden color.
Meat chops in batter can be served with vegetable salad, fried potatoes, stewed cabbage or steamed vegetables.
Delicious Golden Chicken Breast Chops
We need: a pound of chicken, a couple of eggs, a tablespoon of Dijon mustard, a teaspoon of honey, 0.5 light beer and 250 gr. flour.
Cut the chicken fillet into 1 cm thick slices, beat off, sprinkle with spices.
We prepare the batter: beer, eggs, flour, Dijon mustard, honey and a pinch of salt, thoroughly beat, add salt and send everything to the refrigerator.
We well heat the pan with vegetable oil, dip the slices of the beaten filet into the batter and fry until golden brown. Thanks to honey, the color of the chops will be saturated, golden, and the taste will be spicy.
Chicken chops can be served with vegetable salad, steamed vegetables.
Meat chops are good in the classic lezon. This is a French mixture of breadcrumbs and eggs, in which chopped meat is crumbling.
Beat meat, salt, pepper, sprinkle with spices or pickle in any marinade.
Beat eggs well, dip the beaten meat in them, carefully roll it on both sides in breadcrumbs and fry in hot oil.
The crust is very appetizing. Unlike batter, the lezon remains crispy for a very long time.
