To cook the eggplant in Chinese, stock up on the following set of products: a couple of blueberries, vinegar (10 gr.), Soy sauce (50 gr.), Sugar (10 gr.), Honey (5 gr.), Olive oil (50 gr. ), starch (10 gr.) and a pinch of salt.
Rinse the vegetables, cut them into long slices. Then pour the olive oil into the pan, heat it and put the food out. Fry should be from two sides. We add a little water and simmer over low heat for 15 minutes.
When the vegetables are ready, they need to be transferred to a separate dish, and in a pan where the eggplants are stewed, add vinegar, honey, sugar, starch and soy sauce. Next, pour 100 ml of water and let the sauce boil. Add vegetables to the sauce and simmer for 5 minutes. Chinese eggplant can be served with brown bread.
Blue ones can be grilled, on hot coals or in the oven with garlic and grated ginger, an amazing dish with a piquant taste is obtained. Interpret with gravy. An unusual and bright combination is obtained with the addition of peanut and sesame oil.
Chinese sweet eggplant
Ingredients: two blue ones, grated ginger (10 gr.), Green onions, garlic (6 cloves), chili pepper to taste, a bunch of dill.
For gravy: lemon juice (30 gr.), Soy sauce (50 gr.), Sugar (2 teaspoons), black pepper and salt.
Cooking Gravy
We mix lemon juice, soy sauce, sugar and water, add spices there. We cut hot pepper into rings, finely chop the green onion, squeeze the garlic with the help of a garlic press. Eggplant must be cut into thin strips and put in a preheated pan. When the vegetables get a golden color, they need to be transferred to a napkin and allowed to drain the oil.
Fry onion, garlic, grated ginger and hot pepper in vegetable oil for 2 minutes, then add the blue ones to the mass and pour in the pre-prepared gravy. Stew under the lid no more than five minutes. Sprinkle the finished dish with herbs, serve with rice.

Cooking method
1. Peeled potatoes cut into small cubes. Peel the eggplant and cut it into large plates. If the vegetables are bitter, they must be soaked for 10 minutes in salted water.
2. The pulp of bell pepper is cut into squares, and peeled garlic - in circles. Finely chop the cilantro.
3. Fry the potatoes until golden brown. Separately, fry eggplant. We put ready vegetables on the potatoes and pour in soy sauce.
4. We breed starch in cold water and pour into a pan, mix everything well.
5. Stew until the gravy becomes thick and uniform. Add bell pepper, garlic, sesame and cilantro to the finished dish.
