Japanese cuisine is very popular these days. All over the world, people enjoy sushi and rolls prepared in a variety of ways. Sometimes the combination of ingredients in them may not be quite ordinary. For example, vegetable rolls deserve special attention. For real vegetarians
Supporters of vegetarian food can make vegetable rolls using the following basic ingredients: 2 zucchini, cucumber, carrots, sweet pepper pods and a little cream cheese.
To prepare such a dish you must:
- Zucchini gently cut lengthwise into even strips in the form of thin ribbons. To do this, it is better to use a special knife.
- Chop remaining vegetables with straws.
- Spread a strip of zucchini with cheese. The layer should not be too thick.
- From one edge, put a little vegetable mixture on it .
- Twist the roll, gently wrapping your fingers in a thin ribbon.
- So that the dish retains its shape and does not crumble, it must be pierced from the side with a small skewer or an ordinary toothpick.
- Do the same with the remaining strips of zucchini.
It turns out original, but very tasty vegetable rolls. Juicy and fragrant, they will certainly appeal to lovers of healthy food. In principle, in order to cook them, it is not necessary to be a vegetarian.
Rolls with vegetable filling
If you slightly change the classic composition of the filling, you can get quite interesting vegetable rolls. In this case, you will need: 200 grams of rice and the same Adyghe cheese, 1 avocado, 5 grams of salt, 2 cups of water, a cucumber, half a pod of bell pepper and 4 leaves of nori.
Such rolls are prepared in the usual way:
- First, rice should be poured into a pan, and then pour it with water, salt and cook for 20 minutes, until all the liquid has boiled away. The finished product should cool gradually. This will take 1-2 hours.
- The remaining ingredients are carefully cut into strips with a thickness of not more than 5 millimeters.
- On the table, spread a mat and put a sheet of pressed algae on it.
- Cover half the entire surface of the nori with rice. So that the rolls do not crumble then, it must be carefully tamped.
- On the one hand, put part of the prepared filling.
- Lift the edge of the mat and, helping with your fingers, twist the food tightly into a roll. Do not fold it too tight. In this case, the sheet may not withstand and tear. Leave 3 centimeters for gluing, and carefully cut the rest of the nori with a sharp knife. In this form, the workpiece must lie down for at least 10 minutes.
- Trim the edges with a knife, and then divide the rest of the roll into 6 identical parts.
These rolls are usually served with soy sauce, pickled ginger and wasabi.
Spring rolls
How else to cook vegetable rolls? The recipe may differ not only in the composition of the filling. For example, wonderful spring rolls are made from thin rice pancakes. To do this, you will need the following set of products: several rice pancakes, vegetables (carrots, cucumbers, Chinese cabbage, bell peppers, green onions, avocado, cilantro), a tablespoon of sesame seeds, soy sauce, a few drops of Tabasco, as well as sesame and olive butter.
The cooking process includes several successive steps:
- Cut the vegetables into strips (not too thin) and put them in a bowl. Add seeds, Tabasco sauce and butter. To make the filling taste more piquant, you can introduce a few drops of lemon juice. Products need to be mixed well.
- Each pancake is first dipped in water for 20 seconds, and then spread it on a cutting board. Put the filling in the center and wrap the product with an envelope.
Such rolls should be eaten by dipping in soya (or other) sauce. The composition of the filling can be any. Everything will depend on your own taste preferences and the availability of specific products.
Rolls in the test
Using βfiloβ dough instead of nori sheets, you can cook wonderful vegetable rolls. At home, doing this is very easy. You will need the following components: for 15 sheets of ready-made filo dough, 300 grams of sprouted beans, 2 carrots, half a head of Beijing cabbage, 2 sweet peppers, 1 zucchini, a little vinegar for sushi and olive oil.
The method of preparation of such rolls, in principle, remains the same:
- First you need to do the filling. To do this, the beans must be washed and dried well, and chopped peeled carrots using a special grater for Korean dishes.
- Put both products in one dish, pour with vinegar and set for marinating for at least a couple of hours.
- Steam the pepper in the oven, and then peel it and remove all the seeds. Chop the remaining pulp arbitrarily.
- Finely chop the cabbage.
- Cut zucchini into even thin strips.
- Spread the dough on a cutting board.
- Put the prepared ingredients on it, and then collapse everything in a classic way. The remaining edge of the filo should be moistened with water and glued.
- Fry in oil over medium heat until a characteristic golden crust appears on the surface of the pancake.
Such rolls are pleasant to eat both hot and cold.
Mexican rolls
Using Mexican recipes, you can also cook a delicious vegetable roll. The photo of the finished dish looks very appetizing. The following products are used for preparation: 1 tortilla, 10 grams of sweet pepper, 50 grams of soft cream cheese, 5 grams of chili sauce, and also, if desired, you can add a few tomatoes, Iceberg salad, Crimean onion and Salsa sauce.
The dish is preparing very quickly:
- The first step is to mix the chili sauce well with the cheese.
- Spread the cake with the resulting mass.
- Gently cut all the vegetables into thin strips and place them in the center of the tortilla.
- Roll the cake into a roll, and then cut it into portions.
Typically, these rolls are served with Salsa sauce traditional for Mexicans. It can be purchased in advance in the store or prepared independently. To do this, finely chop the bell pepper, tomatoes, onions, herbs (parsley, basil, dill) and celery. Then it remains only to add a little ketchup and mix everything well.
