Salmon cutlets

It seems that cutlets could be simpler? And if you cook them from salmon? We can say that salmon cutlets are more than just cutlets. They are so good and tasty that they simply don’t even want to serve them as a simple daily dinner, it constantly seems that cooking such cutlets requires a special occasion, some kind of holiday.

In order to cook salmon fish cakes , you will need:

600 g of potatoes, half a kilogram of salmon fillet, a bunch of parsley, a tablespoon of flour, one egg, one lemon, salt, olive oil, black pepper.

Boil potatoes in slightly salted water, peeled and cut into very thin slices.

Peel the salmon fillet, remove the bones, rub with salt and olive oil and steam for 10 minutes (you can use an electric double boiler, if not, take a colander and place it in a pot of boiling water).

Dry the finished potatoes, and mash in a large bowl with a fork or using a mashed blender. Add cooled fish to mashed potatoes and also thoroughly mash, add the egg, flour, chopped parsley, as well as pepper and salt to taste. Squeeze a few drops of lemon juice and grate a small amount of zest. Mix well.

Next, you need to pour a little flour on the working surface and mold round small cutlets from the prepared minced meat, regularly rolling them in flour so that the minced fish does not stick to your hands.

Fry salmon cutlets is required as usual in olive or sunflower refined oil, about 3-4 minutes on each side.

Also, instead of parsley or in addition to it, you can add minced green fresh basil or some other spicy herbs to your liking, minced in the same way. If you want to experiment a little, cook salmon cutlets with crab sticks.

You will need: a pound of salmon fillet, 200 g of good crab sticks (or crab meat), salt, 2 handfuls of wheat flour, 100 g of butter, pepper, a pinch of thyme.

Salmon fillet needs to be cleaned of skin and bones, cut into not very large pieces. Butter should be diced. Scroll fish, crab sticks and butter through a meat grinder. Then the mince should be well kneading, salt, add thyme, pepper. Dipping hands regularly in a bowl with water poured into it, form medium-sized cutlets that must be rolled in flour.

Melt a very small amount of butter in a frying pan, fry the patties on both sides until golden brown. Transfer the fried salmon cutlets to a paper towel so that the excess fat is absorbed, now you can serve!

It is preferable to take the oil cold, since it is easier to pass through a meat grinder, while it does not spread over the inside of the meat grinder. In this recipe, butter is required to bind the entire mass, as well as to make the patties more delicate in taste.

If you wish, you can drive 1 egg into the meat, but then the whole mass can become more liquid, and the cutlets will be difficult to form, they will become flatter and will not look so pretty. If, nevertheless, add the egg, then sift 2 tablespoons of flour into the minced fish in order to return the minced meat to its previous consistency.

If salmon seems too expensive fish for you, then cook herring cutlets. The simplest herring cutlets can be prepared quickly and simply, but they turn out to be tasty and not burdensome for the family budget.

You will need: a kilogram of herring, 150 g of potatoes, onion, 10 g of garlic, 10 g of salt, a pinch of pepper, 100 ml of vegetable oil, one egg, breadcrumbs.

Herring can be taken, both fresh and fresh-frozen. It must be cleaned of scales, cut off the head, fins, tail, gutted. Further, in running water, it is necessary to rinse well pieces of herring, caviar and milk. Cut potatoes, garlic and onions into small pieces. Stir everything together with the fish, salt and pepper.

Then everything needs to be scrolled through the meat grinder about two or three times. In the prepared stuffing, beat the egg and mix well. Form cutlets from minced meat and roll them well in breadcrumbs. Then fry them in a skillet in vegetable oil over medium heat for 4 minutes on both sides.
