Winter preparations: lecho with rice

A good preparation for the winter will be the lecho with rice. Canned bell peppers are a great snack for any table. You can cook lecho with rice for the winter using one of the following recipes.

This recipe does not contain vinegar and is well stored in jars during the winter. To cook it, you will need:

  • 5-6 large heads of onions (about 1 kg);
  • 5-6 large pieces of fresh carrots (about 1 kg);
  • 7-8 large pieces of bell pepper (about 1 kg);
  • ripe tomatoes about 3 kg;
  • 1 (about 200 grams) glass of rice;
  • 1 (about 200 grams) glass of granulated sugar;
  • salt - about 2 tablespoons;
  • 1.5 cups (about 300 ml) of vegetable oil.

Cooking technology

Lecho with rice - the recipe is simple and quick. To cook it, you need to peel the onions and carrots. Chop the onions in half rings, grind the carrots. Cut the pepper, remove the seeds and partitions, chop with straws. Tomatoes can either be twisted through a meat grinder, or use a grater. Place all prepared ingredients in a cooking container. Put on fire for 20 minutes. Then wash the rice and put in the vegetables. Salt, add sugar and pour vegetable oil. Mix everything thoroughly. Cook for 4 minutes. Then lay the lecho with rice in sterilized jars and tighten the lids. Banks turn upside down, leave to cool. Then put it in a dark place.

You can cook hot lecho with rice in several interesting ways. We offer such a recipe. It includes the following products:

  • about 500 ml of vegetable oil (or 2.5 cups);
  • 5-6 large heads of onions (about 1 kg);
  • 5-6 pieces (about 1 kg) of large fresh carrots;
  • 7-8 pieces (about 1 kg) of bell pepper;
  • a glass (about 200 grams) of granulated sugar;
  • 2 tablespoons of salt;
  • uncooked rice - 2 cups (about 400 grams);
  • 3 kg of fresh ripe tomatoes;
  • to taste bitter capsicum.

Cooking technology

Wash the tomatoes and scroll with a meat grinder or wipe them through a grater. Peel and chop the carrots. Cut onions into rings / half rings. Remove seeds and partitions from bell pepper, chop with straws. Chill pepper finely and finely chop with a knife. Put all prepared vegetables in a large pot or cooking bowl, put pre-washed rice. Salt, put sugar, pour oil. Turn on a moderate heat and cook for about 40 minutes. After stewing, lay the lecho on the banks and tighten the lids.

The original recipe for lecho with rice includes the following ingredients:

  • lard - a piece weighing 80 grams;
  • onion head (about 60 grams);
  • 8 sweet peppers (large);
  • 6-8 ripe medium sized tomatoes;
  • sausage or ham - a piece weighing about 150 grams;
  • a glass with a slide (about 250 grams) of rice;
  • salt.

Cooking technology

This recipe can be used not only for winter preparations, but also for preparing fresh snacks to the table. Cut the lard into small pieces, put in a pan and drain the fat from it. In it, fry chopped onions, sliced ​​into thin rings . Then add chopped tomatoes. Simmer for about 10 minutes. During this time, clear the seeds and partitions of the pepper, cut into thin strips. Put to the rest of the ingredients. Salt. Simmer for about 10 minutes. Grind the sausage into pieces, place in a pan, pour the indicated amount of rice, pour a glass of water. Its level should be 1 cm above the level of rice. Stir, wait for it to boil. Then put the pan in the oven until cooked. You can install a divider on the stove and continue to simmer rice on the slowest fire. Mixing is no longer necessary. Put the finished dish in jars and roll up the lids. If you serve lecho to the table, then place it on plates and sprinkle with herbs.
