One of the most inexpensive varieties of fish on our shelves is frozen herring. It costs about the same as the fish we buy for our pets. For some reason, many underestimate the taste of herring and do not even think about what can be prepared from it. Nevertheless, there are numerous recipes for making herring, according to which it turns out to be very tasty. First of all, this is a traditional salting of herring, but there are recipes for making herring in various other ways.
For example, fried herring can be very tasty. Naturally, unsalted fish, usually frozen, is taken for frying. Many people believe that fried herring has an unpleasant odor, but this is not so - it is tasty, tender and juicy, no worse than many other varieties of fish. Herring is fried in the same way as any other fish of the appropriate size - in slices or whole, in batter or in flour, as you like.
Of course, salted herring was most prevalent, and the recipes for making herring and appetizers from it are truly diverse. These are numerous salads and pastes - they are in many cuisines of the peoples of the world, but we traditionally enjoy special love. We even have a fish dish called not just something, but a herring.
The simplest appetizer of this fish is a herring with onions. Everything is done more than simply: one fish, one onion, vegetable oil and lemon are taken. The herring is cut in the most ordinary way, that is, the insides are removed from it. As for the cleaning of herring, then, in principle, the skin can not be removed - some leave it on purpose, not unreasonably believing that it tastes better. Naturally, this option is acceptable only for a meal in the warm company of “your people,” since the process of eating unpeeled herring involves some intimacy, and, of course, the scales will have to be cleaned very carefully. The onion is cut into beautiful rings or as it turns out, and one half of it is laid out on the bottom of the dishes (traditionally it is a herring, as well as any other plate), the herring cut into portion pieces, which is covered with the remaining onion, is sprinkled with plenty of lemon, and sprinkled with a small amount of vegetable oil and, if possible, left to marinate for a while, usually very briefly. Sometimes vinegar is used instead of lemon, but its pungent smell can kill even the natural aroma of fish, so it is undesirable to use it.
Also in the category of “favorite herring recipes” includes the unforgettable salad “Herring under a fur coat”. Unforgettable - first of all, because they do not forget to cook it for any more or less noteworthy holiday. In principle, this salad has such qualities as an unusual rich taste, undeniable benefits, low cooking cost, and it could be prepared not only on holidays, but just like that, for dinner, but it stops the process of preparing the ingredients. If vegetables are cooked for him, albeit for a long time, but by themselves, then the process of cutting herring for this salad takes a lot of time, effort and peace of mind. You can, of course, take the finished fillet in preserves, but the taste will not benefit from this, and their chemical composition, as a rule, is able to surprise a laboratory assistant with good experience.
One medium-sized beet is taken for one herring, one large carrot or several small, one large onion, three to four potatoes, a pack of mayonnaise and, as a rule, something else. Quite often, a salad is decorated with a boiled egg on top or a whole layer of them is made, or, for example, a grated apple is used as one of the layers - this is quite tasty, as it enhances the taste contrast, for which we love this salad.
All vegetables except onions are boiled until cooked and laid out in layers in a certain way, and some layers are smeared with mayonnaise. First comes potato grated, greased with mayonnaise, put on herring and onions, or onions and herring, or herring mixed with onions - there is eternal debate, and there is no one opinion, but the main thing is that they are finely chopped. Onions should be able to marinate in mayonnaise, so it is highly advisable to lubricate it. Next, you can rub the apple, best of all, sweet and sour. Then comes mayonnaise, carrots, again mayonnaise, beets, then a lot of mayonnaise and a decoration in the form of a grated egg, if there is such a desire. Popularly favorite salad is ready.
