How do we cook it

Wash the knuckle, scrape until the skin is completely clean. We have a pork knuckle in the oven, but according to this recipe it is supposed to be cooked at first. Put in a large pan whole so that its water completely covers with a margin of 2-3 centimeters. Boil until boiling, then reduce the temperature to a minimum and remove the foam. Put the peeled onion and cook for 1 hour with a slight boil. Add salt, all roots and spices and continue cooking for about another hour. At this time, peel the garlic and cut it into longitudinal slices. Stir soy sauce and honey. Remove the shank from the broth. Warm the oven to two hundred degrees. Fill the knuckle with garlic, for which deep punctures are made with a thin and narrow knife. Lubricate the entire surface with a mixture of honey and soy sauce and bake for about 15-20 minutes, then turn the knuckle over, pour over the rest of the sauce and brown for the same amount of time. The pork knuckle in the oven takes on an incredibly mouth-watering appearance, excites aromas and turns out to be unusually tasty. The advantage of this recipe is that the meat is soft. If you do not use pre-cooking, you need to marinate the pork leg for a long time.

What will be needed to prepare this dish

One big or 2-3 small shanks with a total weight of about one and a half kilograms, a head of garlic, a mixture of peppers and salt, mustard, soy sauce, you can use any herbs, rosemary, turmeric, because pork shank in the oven loves spices.

How do we cook it

Rinse the pork, peel it and stuff it with garlic: pierce it with a narrow knife, turn it, widening the hole, and send a whole or half lobule inside the knife. Cut the skin with a grill - only the top, do not touch the meat. So baked faster and better. Coat the shank with pepper, herbs, a mixture of soy sauce and mustard and leave to marinate overnight (and preferably for a day). Salt before baking. Remove from the refrigerator in advance so that the meat is warmed to room temperature, after which you can bake in an oven already warmed up to two hundred degrees. The big shank is baked for about two hours, the small ones are less. You can check with a fork or a toothpick, piercing the thickest place. If it penetrates easily and the juice is transparent - done. About once every fifteen minutes, the pork knuckle in the oven should be turned upside down for all-round browning. You can save yourself from such care by using foil or a sleeve. Then the knuckle will alarm only once - half an hour before the readiness you need to open the package and bake in the open state until golden brown. If the oven is gas and fries too low, the knuckle can be laid on a pillow of onions or potatoes. Ready shank must be wrapped in foil and allowed to reach for about half an hour. Then it lends itself perfectly to slicing.
