Buns and buns - a famous mouth-watering dessert of Russian folk cuisine. As I remember now: as a child, you come to visit your beloved grandmother for a weekend, and in the morning she always smells of fragrant pastries throughout the house. Yes, of course, all people love fresh buns and buns, because they come from our childhood! To plunge into it again, I propose to cook pastries with my own hands, because the store does not go to any comparison.
Naturally, the question arises - how to cook buns? Their recipe is simple, the main thing is to observe all proportions and recommendations. So, we proceed to the "amateur". First, let's clean up the desktop so that nothing distracts us. Knead the yeast dough - take a couple of bags of yeast, half a glass of sugar, half a teaspoon of salt, half a packet of milk or kefir, a couple of eggs, 120 g of margarine, a bag of vanillin and half a bag of baking powder. Kefir buns will turn out even more tender than with ordinary milk. If there is neither one nor the other, you can use serum. We will dilute the yeast with half the warmed milk and sugar, add the eggs and beat the whisk a little (but in no case with a mixer!). Mixed margarine is mixed with the second part of milk or kefir (whey, at worst), and add this mixture to the mass of sugar and yeast. Gradually add flour with vanilla and baking powder. Now knead the tender dough. Take the flour "by eye". You need just enough so that the dough can be rolled out and cut into circles. We roll the dough into a sausage, cut it into several parts and make flat cakes. Lubricate the resulting cakes with butter and sprinkle with sugar (you can add cinnamon, coconut and other seasonings). We turn it into a roll, bend it in half and pinch the tips. We cut the middle of the roll, not reaching the edges of about 2 cm, twist the halves so that we get something like a heart. We put in the oven and bake this beauty until golden brown. Everything, our buns, the recipe of which is quite simple, ready, treat them to your household and guests! Everyone will be satisfied!
If you want something new, you can cook buns with cottage cheese. We take a pack of cottage cheese (usually it weighs 250 g), 300 g butter, one tablespoon of vanillin, a glass of flour, a baking powder (one teaspoon), a pinch of salt, raisins, a teaspoon of cinnamon, a quarter cup of granulated sugar, a couple of tablespoons of lemon juice and 150 g of powdered sugar. We well wipe the cottage cheese through a sieve, add oil, salt, vanillin, a baking powder and flour to it. We leave a little oil to grease the dough. Knead the dough and put it in the refrigerator for an hour. After an hour, we roll out the dough from the curd on the prepared table and grease our layer with the rest of the oil. How to prepare a table? Wipe the work surface clean and sprinkle flour on the table well. Pre-soaked in boiled water and dried raisins, mix with sugar and cinnamon. Sprinkle the dough with this mixture. We roll it into a long roll and cut it with a knife into not very thick pieces. Now, put the future buns, the recipe of which we just mastered, onto a baking sheet, oiled and put in a hot oven for about half an hour. As soon as the buns are browned, we pull out and grease them, while still warm, with icing from granulated sugar and lemon juice. Enjoy your meal!
