How to cook squids in sour cream sauce

Seafood goes well with any side dish. Their main advantages are speed and ease of preparation, usefulness and excellent gentle and at the same time bright taste.

Cut the squid carcasses into rings or half rings, peel the onion and chop in half rings. Melt the butter in a pan and send the onions there. Simmer until golden brown, then add the squid and, with constant stirring, keep in the pan for no more than 3 minutes! This is the most important point, because too much heat treatment makes the squid very stiff and tasteless.

While squids are being stewed, carefully mix sour cream with flour in a separate bowl (it’s better to make it a blender, it will turn out to be homogeneous), after this mixture season the dish and cook over medium heat for a minute while stirring continuously so that the flour does not stray into lumps. At the finish, season the contents of the pan with salt and pepper. Squids in sour cream sauce are ready, now they can be safely served!

Interestingly, the process can be slightly modified, while the dish does not lose excellent taste:

  • when the onion in the pan acquires a light golden hue, crush it with flour and mix thoroughly;
  • after a minute add sour cream and bring the mass to a boil;
  • put squid rings in boiling sour cream sauce and simmer for 2-3 minutes under a lid over medium heat until cooked. Salt, pepper to taste.

So, we supplement the above list of ingredients with new items:

  • garlic - 2 large cloves;
  • Provencal herbs (this is a dry mixture of herbs taken in equal proportions; it includes basil, thyme, rosemary, thyme, oregano, sage, mint and marjoram; sold in stores ready-made; if desired, you can take any other herbal mixture) - large pinch.

Chop the garlic and finely chop together with the onion and flour, fry the butter together until golden brown, then add the sour cream, add the calamari after boiling the sauce and add the herbs in 2 minutes. Mix everything thoroughly, remove from heat after a minute.

Oven and slow cooker will come to the rescue

You can cook squid in a cream sauce in the oven. It will take a little longer, but you will be satisfied with the result. The ingredients remain the same, only sunflower oil (2 full tablespoons) and spicy hard cheese (200 grams) are added.

So, melt the butter in a pan, fry onions and garlic (optional) with flour until light gold in it, transfer to a separate bowl and mix with sour cream. On a baking sheet greased with sunflower oil, put the squid, pour them with sour cream sauce. Send in an oven preheated to 180 degrees and cook for 25 minutes.

Grate the cheese on a coarse grater, get a baking sheet, sprinkle squid with grated cheese and send it back to the oven for 5 minutes. Tasty, healthy and satisfying dish is ready!

If you want to cook squids in sour cream sauce in a slow cooker, you just need to put all the prepared foods in a bowl, close the lid and turn on the stewing mode for 30-35 minutes. In this version, the dish will turn out incredibly tender.

Do not buy ready-made ice cream squid fillets. It is better to buy 2 small freshly frozen carcasses (with a small layer of ice) and clean them at home. It is simple to do: first you need to separate the head with all the insides and remove the chitin plate from the carcass, and then remove all the films, first scalding the carcass with boiling water.

You can experiment with seasonings. Mustard, soy sauce, fresh dill, salad pepper - all this goes well with seafood.
