  • sunflower oil - one and a half glasses;
  • salt - 2 teaspoons (or more to taste);
  • allspice - 8-10 peas;
  • several clove inflorescences;
  • a pinch of coriander;
  • vinegar (6%) - 120 grams.

Cooking

Peel the zucchini from the peel and seeds, pepper - from the stalk, garlic - from the husk. Crumble tomatoes with peel. Finely chop everything, put it in cast iron and simmer for 35-40 minutes over medium heat. 15 minutes before the end of salt, add sugar and spices, pour juice if you do not use tomatoes. However, the appetizer from the squash "Mother-in-law's tongue" turns out to be softer in taste. To prepare this salad for 3 kg of the main product, you need to take one and a half kilograms of tomatoes, 1 kg of pepper, 3 pieces of hot pepper (red pods) or 3 heads of garlic, vegetable oil - 1 cup (250 g), salt - from 1 tablespoon (each taste), sugar - 1 cup (or a little more - to taste), 6% vinegar - 1 cup.

Zucchini is cleaned and cut into thin strips. Tomatoes and both types of pepper are passed through a meat grinder. Now preparing the appetizer "Mother-in-law's tongue".
