Bolognese sauce: Italian pasta recipe

  • spaghetti (the amount depends on how many servings you plan to cook);
  • minced beef - 300-400 grams;
  • ripe tomatoes - several medium-sized fruits;
  • carrots - 1 pc. medium size;
  • tomatoes in their own juice or tomato paste (for lack of even a simple ketchup can be used) - a few tablespoons;
  • olive oil;
  • flour - 1 tbsp. the spoon;
  • onion head;
  • spices: basil, dry herbs, other seasonings;
  • garlic;
  • Parmesan cheese
  • dry red wine - 50-100 ml.

Pasta for the dish is boiled at the very end. And you should start with the preparation of vegetables. Carrots and onions should be peeled and finely chopped, then fry in a pan. If you have minced meat, then add it to the vegetables (if not, then you need to scroll a piece of beef with a little fat). Salt and mix. Stew under the lid for 5 minutes. Then pour red wine, mix again and simmer for about 10 minutes. The smell of alcohol should disappear. Peel the tomatoes. Cut the tops of the tomatoes crosswise, scald with boiling water. If the skin is difficult to peel off, hold the tomatoes in hot water for a few seconds. After that, chop the tomatoes with a blender or a regular grater. To them add tomato juice or pasta (ketchup), dry herbs, spices, salt. Dilute a spoonful of flour in cold water or meat broth. Make sure that no lumps form. Pour the mixture into the tomatoes, mix. Combine the sauce with minced meat, simmer on the slowest fire. Estimated time is an hour. Only prolonged longing will add a delicate taste to the Bolognese sauce. The pasta is boiled a few minutes before it is ready. Traditionally, Italians serve spaghetti with this sauce, but any variety of pasta can be used if desired. Before removing the minced meat from the heat, put a clove of chopped garlic in it. Stir and hold on fire for a few more minutes. The time is 40 minutes. Pour oil into a bowl, add carrots and onions, fry. Attach the minced vegetables. Remove the peel from the tomatoes, grind them and attach to the minced meat. Put salt, spices, tomato paste. Dilute flour in water and combine with the bulk. Now set the "Extinguishing" mode for an hour or a half. After the end of time, the bolognese sauce will be ready. Pasta is boiled in a separate saucepan. The prepared ingredients are combined, beautifully decorated and served.
