If you are a fan of Chinese cuisine or just want to cook something new from summer vegetables, then eggplant in sweet and sour sauce will be an excellent choice. The dish can be served as a side dish, or it can be served as it is done in China itself - with boiled fresh rice. The combination of tastes will pleasantly surprise you.
How to cook eggplant in sweet and sour sauce
You will need:
- several medium-sized eggplants;
- multi-colored bell pepper - take a half of red, green and yellow;
- onion;
- a couple of cloves of garlic and a small piece of fresh ginger root.
Prepare the following ingredients for the sauce:
- 2 tbsp. l good quality soy sauce;
- 2 tbsp. l vinegar 9% (if you have 6%, then put 3 tablespoons);
- 2 tbsp. l granulated sugar;
- a little starch - a teaspoon or a little less.
To
cook eggplant in
Chinese sauce, you need to have a deep wok pan, if not, a low pan or, at worst, an ordinary pan. Wash the eggplants, cut into slices (do not remove the peel), salt and leave to lie for half an hour - they will give the juice to be drained, and the vegetables should be washed again and dried with a towel. Cut the pepper into long slices, onion into half rings, and finely chop the ginger and garlic. In a frying pan with very hot vegetable oil, quickly fry the eggplants first, then after 2-3 minutes add the onions and ginger, and lastly,
bell pepper. Prepare the sauce: for this, mix the specified ingredients in a bowl, add half a glass of water to them. Pour it to the vegetables, mix and let simmer for a quarter hour or a little more. After this time, the eggplants in the sauce will be ready, they can be sprinkled for taste and decoration with fried sesame seeds and served to the table - either for meat, or, most deliciously, for fresh rice. Fans of Chinese cuisine and those who are new to it will definitely appreciate this dish.
Sweet and sour potatoes and eggplant
The previous recipe can be improved a bit - both the sauce and the main ingredients, and cook a really tasty dish. Take:
- 2 medium ripe eggplant;
- 1 bright bell pepper;
- several medium-sized potatoes;
- garlic and spices to taste.
For the sauce, prepare:
- 2 tbsp. l honey and soy sauce;
- 1 tbsp. l apple or rice vinegar;
- 1 glass of water and 1 tbsp. l starch.
Cut the eggplant into small slices, salt and let stand for about 20-30 minutes. Cut the pepper into long strips. Peel the potatoes and chop them into cubes. Heat a wok or pan, and quickly fry the vegetables in boiling vegetable oil. For the sauce, mix all the ingredients in a bowl and pour to the eggplant. After stewing potatoes and eggplant in sweet and sour sauce for a quarter of an hour. The sourness of natural vinegar and the sweetness of fresh honey will give an unusual taste to the dish. Serve with fresh rice or Chinese noodles. Just so quickly and easily you can cook one of the great dishes of oriental cuisine.
