Okroshka vegetarian on kvass

- Boil three potatoes and one carrot until tender in hot water, without removing the peel from vegetables.
- Peel two large cucumbers and cut them into a large cube.
- Rinse chives and dill thoroughly, then chop with a knife.
- Peel boiled vegetables and cut into cubes.
- Transfer the vegetables to the pan, add green peas, salt and spices to taste to them. Mix the ingredients thoroughly and let them brew in the refrigerator for about half an hour.
When the salt and spices disperse, transfer the contents of the pan to the plates, fill them with kvass and serve to the table with fresh sour cream.
Vegetarian Served Okrosh
As you know, the classic summer okroshka is usually made with kvass. However, we suggest you try this dish made with whey. If you are seriously passionate about vegetarianism, then, most likely, often prepare a panir, which means that you always have fresh whey at your disposal. Such a vegetarian okroshka will help you refresh yourself on a hot summer day, quench your hunger and thirst. You can cook it from the following ingredients:
- Boiled potatoes.
- Fresh cucumbers.
- Panir.
- Greens (dill, cilantro, sorrel or spinach).
- Mustard ready-made or dry.
- Spices (asafoetida).
- Radish (optional).
- Black salt.
- Serum.
- Sour cream is ready.
Cut fresh and cooked vegetables into small cubes, add spices, chopped herbs in any proportions to them. Mix sour cream with whey and pour the prepared vegetables into the resulting liquid. At the very end, put mustard (prepared or dry, steamed with boiling water). Put the okroshka in the fridge for 20-30 minutes, so that it acquires the desired temperature, and then serve it to the table.
Okroshka on kefir
We offer you an alternative vegetarian option that will help you quench your hunger and thirst. This dish does not contain meat and eggs, and therefore is perfectly absorbed by the body. Vegetarian okroshka on kefir is prepared as follows:
- Boil five potatoes and three carrots in a double boiler or in water. When the vegetables have cooled, peel them and cut into small cubes.
- Crush two large fresh cucumbers and one tomato in the same way.
- Dilute kefir with water and pour prepared vegetables. Add chopped greens, onions, lemon juice, salt and spices.
Serve the finished dish chilled.
Okroshka with cheese
If you do not want to add meat, sausage or eggs to this summer soup, then use our recipe. We suggest you cook okroshka with Adyghe cheese, which will give the dish a special taste and make it more satisfying. You can also put in it soy cooked or smoked sausage. Vegetarian okroshka is very easy to prepare according to this recipe. To get started, prepare and grind the following foods:
- Three fresh cucumbers.
- Six fresh radishes.
- Four boiled potatoes.
- 150 grams of Adyghe cheese (if desired, it can be replaced with panir or tofu).
- Greens parsley and dill.

This dish is suitable for those who prefer to eat healthy food, but have not yet abandoned dairy products. Although, if desired, you can easily replace dairy products with kvass or mineral water. Also, this dish will appeal to those who decided to go on a diet to get rid of excess weight. Vegetarian okrosha for raw foodists is prepared as follows:
- From the Chinese cabbage (200 grams), remove the top leaves, and chop the rest finely.
- Peel two cucumbers and cut into small cubes.
- Free the avocado from the peel and seeds, and then cut the pulp into cubes.
- Rinse six or eight radishes well and cut into half rings.
- Chop the greens of cilantro, parsley and dill.
- Combine the products in a pan, fill them with kefir (you can replace it with kvass or mineral water), cool and serve.
