Tatar alternators, the recipe of which we will consider below, turn out to be very tasty and satisfying. It is also worth noting that such a dish is too fat and high in calories. Therefore, those who are afraid to spoil their figure, leaning on fried meat patties is not recommended.
Tasty and fragrant alternators: a recipe for the preparation of a Tatar dish
The required ingredients for the filling and dough:
- fresh milk (fat content 3%) - 600 ml;
- dry granulated yeast - 1/3 of a small spoon;
- iodized salt - 2 dessert spoons (for the test ½ spoon, and the rest goes to the filling);
- granulated sugar - 10 g;
- large chicken egg - 1 pc.;
- wheat flour - pour to a density;
- veal without fat - 700 g (for filling);
- odorless sunflower oil - 250 ml (for roasting);
- small onions - 3 pcs. (For filling);
- red pepper - ½ spoon (for the filling).
Dough preparation process
To make the mixers, the recipe of which is surprisingly simple, soft and fluffy, it is recommended to use only a yeast base for their preparation. Thus, it is necessary to slightly warm the fresh milk, add sugar to it and completely dissolve it. Next, in a warm drink, you need to put a little granular yeast and wait for their swelling. After that, the chicken egg, iodized salt and wheat flour should be added to the base. As a result, you should get a thick, but soft dough, which is recommended to keep warm for 1 hour.
Filling process
Tatar-style alternators can be prepared using any meat product. However, we decided to purchase only the flesh of veal without fat. It must be washed well, and then chopped in a blender or meat grinder along with small heads of onions. After the mince is ready, it should be mixed by hand, gradually add red pepper and iodized salt.
Dish formation
How to cook intermittents? They should be made from ready-made yeast dough. To do this, it is necessary to pinch off a piece from the base and roll a cake out of it 8 mm thick and 8 centimeters in diameter. Next, in the middle of the circle, you need to lay out 1.5 dessert spoons of aromatic minced meat, and then raise and pinch the edges, leaving a small hole in the middle. By analogy, all other semi-finished products are also carried out.
Heat treatment
To fry the bridges, take a deep stewpan, pour a sufficient amount of oil into it, heat it up, and then alternately lay out the semi-finished products (up to 5 pieces) with the hole down. When the bottom of the pies is browned, they must be carefully turned over using a fork. The fridges should be fried for no more than 5-8 minutes on each side. It is recommended to lay out the finished dish with a slide in a large and shallow plate.
