Minced meat roll with egg - for the holiday and not only

What can be prepared from minced meat when the patties are already tired or when you need a dish for the festive table? Or maybe you have a catastrophic lack of time to cook to feed a large family? Prepare minced meat roll with egg. It is prepared quickly and easily, it turns out to be very satisfying, and for the holiday it allows you to experiment with the filling and decorations.

The classic recipe for minced meat roll with egg. Products: beef pulp - 600 g, wheat bread - 100 g, onions - 4 onions, a glass of milk or water, an egg - 3 pieces, parsley, pepper, salt, vegetable oil.

Soak bread without crust and slightly squeeze. We wash the meat and cut into pieces, together with onions and bread, pass through a meat grinder. Stuff the minced meat, add seasonings and knead.

Boil eggs, clean and cut along. Dice the onion and fry in oil. We lay out a wet napkin or cling film on the table, put the prepared minced meat in the form of a rectangle 2 cm thick. In the middle, lay in half a row of eggs, sprinkle them with fried onions on top. Raising the ends of the film, connect the edges of the meat layer and pinch them. We spread the roll in a greased form or baking sheet so that the seam is at the bottom and put in a preheated oven. In order for the meatloaf from minced meat with an egg to get a delicious crust, you can pour it with batter or just a shaken egg. Bake at a temperature of 220-240⁰ C for about an hour. We serve the finished roll hot or cold with potatoes, vegetables, buckwheat or rice.

In the preparation of the roll, the filling can be varied and vegetables, mushrooms, rice added to the egg. For example, this recipe: minced meatloaf with egg and mushrooms. Products: minced meat (you can take any) - 700 g, mushrooms (any fresh ones are suitable: oyster mushrooms, white and others), two onions, one small carrot, five eggs, two slices of dried bread, salt, pepper and vegetable oil.

We wash the mushrooms (if these are other mushrooms, then clean them and boil them first) and cut them into small pieces. We heat the pan, make a medium heat and fry the mushrooms. Onion cut into small cubes, three carrots on a grater. Add half the cut roots to the mushrooms, salt, mix everything. Reduce the heat and simmer under the lid.

Hard boil three eggs, peel and cut into small pieces. Soak the roll in water or milk, squeeze, pass through the meat grinder with the remaining onions and add to the minced meat. We beat in two eggs, salt and add spices, knead well. If the mince is dry, you can add a few tablespoons of cold water. We spread the minced meat on a plastic wrap in the shape of a rectangle about two cm thick. We put mushrooms on top with an even layer, stepping back a bit from the edges, then chopped eggs. Gently roll the roll.

Preheat the oven to 180⁰ C, grease the baking sheet with oil, put the roll and bake for one hour. Then we coat the roll with grated yolk and brown in the oven at 200 ° C.

The real decoration of the festive table will be meatloaf in the dough. Products for its preparation: 200 g of pork minced meat, 150 g of veal minced meat, one layer of puff pastry, half a kilogram of fresh mushrooms, one onion, two eggs, 7 pieces of prunes and dried apricots, a quarter cup of pine nuts, the same amount of raisins, a spoonful of mustard, butter, lemon juice, salt, pepper and sugar.

Wash the mushrooms and cut into thin plates. We clean the onion and cut into small cubes. In a heated frying pan we put mushrooms with onions, salt, pepper and add a couple of drops of lemon juice. Constantly stirring, fry over high heat. When the mushrooms are fried, remove the pan from the stove.

We cut prunes with dried apricots into medium-sized cubes and add to the minced meat. There we put pine nuts, raisins, mustard, fried champignons, drive one egg in, knead everything thoroughly.

From the dough we cut a small strip for decoration. The layer is laid out on the film, on the entire surface of the dough with an even layer we lay the forcemeat, leaving several cm unfilled at the edges. We turn the roll in the same way as we prepared the meatloaf from minced meat with an egg - we lift the ends of the film and connect the edges of the dough, grease the seam with an egg and press firmly. We grease the baking sheet with oil and shift the roll.

From the dough we make narrow strips and put it on the roll in the form of a lattice. Lubricate the surface with yolk. We leave the roll for half an hour. After we heat the oven to 200 and bake for about an hour. If the roll starts to burn, you need to close it with foil.
