  • egg white - from 2 chicken eggs.

Thus, to create this mass, it is necessary to pour granulated sugar with boiling water and stir until completely dissolved. After that, it is required to pour citric acid into the same dishes, and then put it on low heat and withstand until it boils. Next, break the chicken eggs, put the yolks to the side (can be used to prepare another dish), and cool the proteins and beat well with a mixer or whisk until a thick foam forms.

After the syrup has just begun to boil, and bubbles form on its surface, the liquid must be removed from the stove and pour in a thin stream to the egg mass. At the same time, proteins should also be continuously beaten. As a result of the described actions, you should definitely get a thick, shiny and lush cream that perfectly keeps its shape.
