Stuffed Zucchini Boats: Minced Meat Recipe
For several servings you will need:
- 3 young zucchini;
- 400 gr. minced meat of your choice - beef, pork, their mixture, you can also take chicken;
- 1 onion and ripe tomato;
- 2 tbsp. l sweet canned corn;
- hard cheese - about 100 gr.;
- mayonnaise, seasonings, frying oil and salt.

boats stuffed with meat are prepared as follows. First finely chop the onions, put in a frying pan with oil and lightly fry. After that, add minced meat, seasonings and salt and cook for no more than 10 minutes. Finely chop the tomatoes and mix with the corn, grate the cheese finely. Zucchini need to be washed, remove the upper part, then cut along in half and remove the pulp. You should get a โboatโ with walls a half centimeter thick. Mix the prepared minced meat with corn and tomatoes and fill it with the free space of zucchini. Mayonnaise also needs to be combined with cheese, the resulting sauce is plentifully spread on top of vegetables. Done.
Zucchini boats stuffed with minced meat should be put on a baking sheet and sent to the oven for 20 minutes or half an hour. This dish can be served independently, without a side dish, or it is possible with mashed potatoes. Since thus cooked vegetables look very aesthetically pleasing, they can be an addition to the festive table.
Zucchini Boats Stuffed with Mushrooms
Try to make such a vegetarian version of the previous recipe. For the filling this time we will take the mushrooms. Remove from your stocks:
- a pound of fresh champignons, porcini mushrooms, boletus, and so on;
- 1 kg of small zucchini, it is best to choose young vegetables;
- 2 onions;
- a few tablespoons of sour cream;
- 150-200 gr. cheese (hard);
- greens, lemon juice, salt, frying oil.

Wash zucchini, cut along, take out the flesh - you should get โboatsโ with fairly thick walls. They need to be slightly fried in a pan. Chop the onion finely, cut the mushrooms into pieces. In the same pan where you cooked the zucchini, brown your filling - first the onion, and then the mushrooms. Salt, season with spices or pepper, add a couple of spoons of sour cream and a little lemon juice. Simmer at low temperature for about 10 minutes. Done. Add chopped greens and stuff with vegetable mass of zucchini. Sprinkle cheese on top of the dish generously and send to bake in the oven, at 200 degrees everything will be ready in 15 minutes. Zucchini boats stuffed with mushrooms are especially tasty if served with sour cream. As a filling, you can also use frying from any vegetables, for example carrots, eggplant and bell pepper. It all depends on your imagination and the availability of products in your refrigerator.
