Chicken and Mushroom Pie

Pies with various fillings are loved by everyone. They impress with their simplicity and amazing taste. With the filling for the pie, you can also experiment and for sure everyone will pick up the filling recipe that he would like.

Well, I want to offer a pie with chicken and mushrooms. Any dough is suitable for this pie. We will consider both options: with yeast and without yeast. So, for a yeast dough, we need: 500 grams of wheat flour (preferably the highest grade, in the worst case, the first grade), 1 egg, 50 grams of butter, half a glass of water, 20 grams of dried or pressed yeast, salt, a little sugar (to make the dough wandered and rose faster). Beat the egg with salt and sugar, add warm water (water temperature should not be higher than 40 Β° C, otherwise the yeast will simply β€œboil”), softened butter, mix. We introduce flour in small portions and knead the dough. As you noticed, I prepare the dough without dough, so it takes much less time and the dough does not turn out acidic, as for example with the sponge method of preparation. Then we remove the dough in a warm place and wait until it rises. You have to wait about an hour.

To make a pie with chicken and mushrooms on a dough without yeast, we need: 400-500 grams of wheat flour, 100 grams of butter (if there is no butter, replace it with creamy margarine), 1 egg, a glass of milk, slaked soda, salt and sugar. Beat milk, salt, sugar and egg with a mixer, add softened butter and flour. Knead the cool dough. Put in the refrigerator for 20 minutes. The dough is ready.

Prepare the filling to bake a pie with chicken and mushrooms. We need: 300 grams of chicken, 20 grams of mushrooms or any other mushrooms, two large onions, 50 grams of butter, spices for chicken, salt and herbs. Boil chicken fillet in salted water until tender. Wash my mushrooms, chop, and fry in butter. After 5 minutes, spread the chopped onion in the mushrooms, salt, season and fry until cooked. Cut boiled fillet into small cubes and combine with mushrooms.

Next, take the dough, divide it into 2 parts (from the specified amount of dough and the filling two closed round pies are obtained). From each part we again remove a small amount of dough - on the "cover". Roll out the dough into a layer and put on a greased form, leaving the sides. We also divide the filling into two parts and put it on the dough. We roll the remaining pieces of dough into a circle, cover the filling and pinch the edges. In the center, leave a hole so that the chicken and mushroom pie is baked from the inside. Bake in the oven for 30 minutes. That's all, our pie is ready.

For lovers of mushroom baking, I propose a cheese pie with mushrooms. We will use the dough without yeast, according to the second recipe, which I described above. For the filling we need: 300 grams of fresh champignons, three large onions, 100 grams of hard cheese, salt, vegetable oil. Grind mushrooms and onions, fry until tender. We divide the dough into two parts: one is slightly larger than the other. We roll out most of it and put it in a mold, spread the mushroom filling on top , sprinkle with grated cheese. We roll out the second part of the dough, cover the filling, pinch the edges. In the center we also leave a hole. Bake in the oven for 20 minutes, no more. The pie with mushrooms and cheese is ready, you can serve it with tea.

According to the same recipe, you can bake an open pie with mushrooms, you just need less dough, because the pie is β€œopen”. And cheese should be sprinkled on the cake 5 minutes before cooked so that it does not burn.

With fillings, of course, you can experiment. The dough recipes that I described above are great for any filling: from meat to sweet. A sweet dessert is a sweet fruit cake. So bake and experiment!
