Dishes of Indian cuisine: recipes and features
It is believed that India is the birthplace of vegetarianism. Why is that? This fact is explained by special climatic zones and religious regulations. The climate here is quite hot, so the meat spoils very quickly, but here there are very large harvests of vegetables (sometimes a few per year). Although all the same, meat is not eaten to a greater extent in the country for religious reasons.
In the northern part of the country there are mainly Muslims who, as you know, do not eat pork, and Hindu supporters refuse to eat beef.
In the south of the country vegetarian cuisine has spread. In this area, people do not even eat vegetables that are similar in color to blood, such as tomatoes and beets. The basis of their diet is the following foods: yellow lentils, dates, sweet peppers and boiled rice. Indian curries are very popular in this country . They, as a rule, are prepared from vegetables, they are very spicy in taste. For Indians, curry is not an ordinary seasoning, it is a whole group of dishes that are combined according to two features. Which one? Firstly, in all such dishes there are combinations of freshly ground spices, and secondly, such Indian dishes have a thick consistency. The basic ingredient for these dishes is coconut, sometimes it is replaced with rice.
In the northern part of the state, Indian meat dishes are common. The most popular ones include: rogan-josh (lamb curry), gustaba (spicy meatballs) and biryani (chicken or lamb with rice porridge and orange sauce).
On the west coast of the state, Indian dishes are prepared mainly from seafood and fish. This area is rich in various types of fish. Most loved are sardines and mackerel. If we talk about which seafood is popular, then this, of course, is king prawns. Fish is prepared in different ways: it is stewed, marinated and fried.
And what are the sweet Indian dishes known around the world and popular in the country itself? Of course, these are mysti-dohi and sandesh. Nimbus punch is also very popular in India. It is made from lemon juice and water. Dairy puddings, pancakes and cookies are also common in the country.
The most famous desserts are gulab jamun (yogurt with grated almonds, as well as flour), rasgulla (cottage cheese balls seasoned with rose water), kulfi (ice cream) and jaleba (delicious pancakes with syrup).
