What is the dough
There are many recipes for homemade cookies with jam. This is, first of all, a dish of shortcrust pastry, which perfectly combines any jam and shtreisel (greasy crumb-topping). Then comes yeast and puff, on kefir, sour cream, milk with baking powder, from oatmeal, rice and a lot of different and tasty things.
And as for the additives, everything is added: spices, nuts, chocolate (Americans love the pieces of chocolate in the dough), raisins and such a familiar and native jam!
Shortbread dough for cookies
A large amount of fat is added to the shortcrust pastry. These fats are butter or margarine. Regular vegetable oil makes the food tough and sugary. The following description can be attached to homemade shortbread recipes with jam: soft, sweet, with sour cream, with cottage cheese, with cheese, yeast. There is also shortcrust pastry with potatoes and lard, but this is already unsweetened, for an amateur, as they say. Here are some of the options:
Soft dough of 300 g flour (two and a half cups), 250 g butter, 2 egg yolks and 75 g sugar.
Sweet dough: 300 g flour, 200 g butter, 1 egg, 100 g sugar, vanillin or lemon peel are added.
Dough with sour cream: 300 g flour, 100 g sour cream, 150 g butter, 1 egg, ¼ teaspoon of soda, a little salt, 1-2 tablespoons of sugar.
Dough with cottage cheese: 300 g flour, 200 g butter, 200 g cottage cheese, ½ teaspoon of salt, 1-2 tablespoons of sugar. There are no eggs.
Dough with cheese: 200 g flour, 150 g grated cheese, 150 g butter, 1 egg. This dough is also suitable for cheesecake.
Chocolate dough: 180 g (one and a half cups) of flour, 100 g sugar, 2 tbsp cocoa, half a teaspoon of baking powder, vanillin, 100 g butter, 1 egg.
Other types of dough
You can make homemade cookies with jam, the dough recipe of which is not needed. It is simply bought at the store (yeast, puff, puff yeast), unsettled (yeast - rises, puff - thaws, yeast-puff slightly rises), rolled into a layer (cake) and first one cake is baked (then the dish is baked faster) or together with the filling.
The recipe for homemade cookies on margarine with jam is the same as with butter, this product needs the same amount. Baking on margarine is more magnificent, but the aftertaste is better on the one in butter.
Dough preparation method: chop fat with flour, into which all dry products are added, add eggs (sour cream, if there is one in the recipe) and quickly knead the dough, roll into a bowl and refrigerate for an hour or more. Kneading should not be delayed, the stretching shortcrust pastry will be stiff after baking.
Then everything is as usual: roll out the dough (up to 1-1.5 cm) and bake a large cake, cut it in half, spread one part with jam and cover with another. Press tightly together, then cut into pieces of any shape.

The amount of shtrezel to cover the jam layer is not less than 1/3 of the dough.

Cookies Fudge (Glaze) Recipes
To decorate cookies, you can use one or more colorful glazed sweets. Cookies can be dipped in icing, can be applied on top with a brush.
White (protein glaze) - 2 egg whites, 200 g of powdered sugar, 1 tablespoon of lemon juice (or dry citric acid diluted with water). Sieve powdered sugar through a sieve into a bowl, add whipped proteins and lemon juice, mix quickly. If desired, food coloring can be added to the protein glaze and make it colorful. After application, the icing is dried in the oven for about 10 minutes, or in the air - about 1-2 hours.
Pink - made from icing sugar 50 g with the addition of 2/3 teaspoon of cranberry juice, or cherry, or pomegranate. Instead of juice, you can add brightly colored liquor. Everything mixes quickly and is applied with a brush to cookies. If the icing is liquid, you can add more powder.
Yellow-orange - made from a mixture of powdered sugar (50 g) with hot milk (1 teaspoon) and turmeric on the tip of a knife.
Chocolate - a mixture of 1 tbsp of sour cream, 50 g of chocolate and 5 tbsp of sugar. All ingredients are mixed and boiled, but not boiled. Apply after cooling the glaze.
Coffee - 100 g of powdered sugar, 1 teaspoon of butter and 1 teaspoon of hot strong coffee. Mix everything quickly and use immediately.
If there is food coloring, then fondant can be made from powdered sugar with the addition of strong alcohol and dye.
It must be remembered that red wine gives a tan fondant. And if you want to use beetroot or carrot juice, you need to add a little lemon juice or citric acid for color stability.
Preparing jam for cookies
If the jam is not thick enough, you can add potato starch to it (even up to half the volume) and warm the mixture with stirring. Liquid jam will leak from the products, spoiling the whole view. You can throw the jam on a sieve and use only a thick part. It should be remembered that chilled jam seems thick, try warming it a little to check it for viscosity (density). To make the jam thicker, you can add biscuit or sand crumbs, ground nuts, chopped corn flakes.
Along with jam, you can add raisins, spices, marmalade, candied fruits (candied fruits) and nuts, or you can mix soft butter with jam and a mixture of grease cookies.
Jam and cream baskets
Shortbread dough and molds are used. Roll the dough thinly, cut out the mugs and cover them with molds, slightly pressing them to the edges. Bake the molds upside down until golden brown. Fill the cooled baskets with jam, and then cream. Such baskets are obtained in size larger than tins. If you need smaller baskets, then they are baked inside the tins. Anyone use cream to fill the baskets: butter, custard, protein, but not very sweet, since the jam at the bottom of the tin is already sweet.
Cookie cutters and more for creating curly cookies
To cut out curly cookies, you can use molds, you can cut out a glass and another. You can make the dough less thick and squeeze the cookies with a syringe with nozzles. You can make “sausages” from the dough and cut them into circles, bake and grease in pairs with jam. You can spread jam on cookies before baking. You can make cake, grease with a very thick jam. Then, rolled into a roll, cut into circles, fashioning roses and more.
There are a great many recipes for homemade cookies with jam, and you can decorate the finished product in different ways. It is only necessary to remember that for too long the mixed dough becomes hard and tasteless during baking.
