Having once tasted such an exquisite dish as dolma, remember the recipe forever and try to cook it as often as possible. The national dish of oriental cuisine. Not a single holiday in Armenia, Georgia, Greece is complete without this treat. Special cabbage rolls wrapped in grape leaves - dolma, their recipe is both simple and complex. The dish is easy to prepare because it resembles ordinary stuffed cabbage, but difficult - as it requires patience and accuracy. In our house, dolma is prepared for special holidays. Especially homemade people like two cooking options. But we will dwell on each in more detail.

Armenian dolma

A delicious dish, for which you need to prepare 350 grams of grape leaves, necessarily pickled, 300 grams of minced pork and 500 grams of beef. Be sure to try making dolma with lamb meat. The taste and aroma of this dish are unique. You will also need one bunch of parsley and dill, a large onion, one hundred grams of butter, one hundred grams of rice and tomato puree. This dish will require a special sauce. To cook it you need the following products: 60 grams of fresh yogurt, 50 grams of sour cream, two garlic cloves, a bunch of dill and a few mint leaves. We figured out the products, now consider a recipe for cooking.

First, we wash the leaves of the grapes to remove excess marinade from them. Carefully cut the cuttings from each sheet, put them in a pan and pour boiling water for 5 minutes, after which we drain the resulting brine. We wash the rice and pour boiling water in a bowl, we insist until it doubles in volume. Fried peeled and finely chopped onions with tomato paste, using butter. We mix in one bowl minced meat, rice, fried onions, chopped dill and parsley and mix well. Salt the resulting mass, slightly pepper and slightly dilute with water.

To prepare dolma, you need a pan with a thick bottom, a cauldron is perfect. Lubricate the dishes with oil and cover the bottom with grape leaves. We take a large board and put the leaves on it with the rough side up. On each we put a little stuffing, bend the sides and roll up the roll. Ready-made semi-finished products are tightly stacked in a prepared pan in several layers. On top of our rolls is a stele leaf layer. Pour boiling water into the pan to the top level of the grape leaves and cook for about an hour. While our dish is being prepared, we are making aromatic sauce. Peel the garlic and pass through a press. We chop dill. Mix sour cream, yogurt, herbs, garlic mass and salt in a bowl. Beat the sauce. Put the prepared dolma on a dish, season with slices of oil and serve with the sauce to the table.

There is another option for cooking such a dish as dolma, the recipe of which is perfect when you want something "such". An indispensable recipe for a lean menu. After all, the meat component in it is replaced by beans and chickpeas. But let's look at it in more detail.

Pasus dolma

It will take a small head of salted or sauerkraut. But if you can’t buy it, then do it yourself. Only three days will be required for the leaven. We take five onions, peel and finely chop. We heat the pan, pour a little vegetable oil into it, put onions and two tablespoons of tomato puree. We pass for 10 minutes. For the preparation of minced meat, it is more convenient to take canned beans, but you can also boil them in advance, in this case add another hundred grams of chickpea and lentils to the beans. We separately cook two hundred grams of wheat groats. Mix beans, chickpeas, lentils, porridge and onions in a bowl in a tomato sauce in a bowl.

We sort out a head of salted cabbage into leaves. We put them in a row on the table. For each, put a tablespoon of minced meat and roll it up. Ready-made semi-finished products are placed in a thick-walled pan, covering on top with the remains of fried onions. Pour boiling water into the pan, add a few garlic cloves and a bunch of chopped parsley. We lay a plate on top to press down the dolma and prevent it from floating. Cook with the lid closed for about 40 minutes on low heat. The dish is sharp and unusually tasty. If desired, you can make sour cream to it.
