Pike caviar is a valuable food product.

Fans of this valuable river fish must have bought fish in which caviar came across more than once. How can you cook this tasty and rich in nutrients product? Traditionally, fish caviar is simply fried in vegetable oil, previously diced in flour, without even thinking that it is possible to cook a wide variety of dishes from it. Pike caviar, salted at home, is in no way inferior to the product manufactured by industrial enterprises. This caviar can be salted in a variety of ways, but one of the most popular is salting it in strong saline for 20 minutes.

One of the main points of preparation is the preparation of caviar for salting. Pike roe is carefully removed from the abdomen. The vast majority of people who cook this product at home wipe it (very carefully) through a sieve with large holes. Ripe pike caviar is quite easily separated from the films.

Pike roe. Cooking:

A saline solution is prepared. Common table salt dissolves in hot, clean water. The strength of the solution is usually checked with potatoes. So her tuber in a good solution will not sink to the bottom, but will float almost to the surface. The prepared solution is cooled, and then caviar is poured onto it. After 20 minutes, the solution is drained. A little sunflower oil is added to the salted caviar. In the refrigerator, such caviar can be stored for up to a month.

Another way in which pike caviar is also often cooked at home:

1. The caviar taken out of the fish is completely filled with cold water. Water should cover it by 1 cm.

2. Caviar is gently mixed with a fork until all the films are removed.

3. Water is drained, and pike caviar is scalded with boiling water.

4. Excess water is drained, and caviar is salted abundantly.

5. Add some lemon juice and vegetable oil to the caviar.

6. The product is thoroughly mixed.

Such pike caviar is ready for use just a day after preparation.

Pike caviar, the preparation of which a delicious paste takes only 40 minutes, can be used in a wide variety of dishes. For this wonderful paste, you will need 150 g of caviar, an egg, ground crackers, a little lemon juice, 20 g of butter, 50 g of mashed potatoes, 2 anchovies, chopped dill and parsley.

Caviar is poured with boiling water and boiled for 10 minutes. Grind the finished caviar, add a raw egg, anchovies, lemon juice, salt, and pepper to it. All ingredients are thoroughly mixed until smooth. It is placed in a sprinkled with breadcrumbs, greased form, and mashed potatoes are spread on it, on top of which pieces of butter are laid out. The dish is baked in the oven for 30 minutes over medium heat.

Fried pike caviar can be cooked not only in its natural form, but also in the form of delicious pancakes. To prepare such a dish, you need about 0.5 kg of pike caviar, onions or a bunch of green onions, a third of a small hot pepper (without seeds), 2 chicken eggs, salt (to taste), a pinch of ground pepper, ground thyme, vegetable oil.

Finely chop the onion and hot pepper. Caviar, onion, pepper, yolks, thyme, ground pepper, salt are mixed together.

Squirrels are whipped with a whisk until a strong foam is obtained. Carefully, in small portions, the prepared mixture is introduced into this foam. All ingredients are gently mixed. Prepared caviar is laid out with a large spoon on a heated frying pan with oil. After a couple of minutes, the pancakes are turned over with a spatula. Prepare them under a closed lid.

Serve the dish like this: washed and dried lettuce leaves are laid out on a serving plate, on which ready-made pancakes are laid out. Decorate the dish with tomatoes and herbs.
