Bolognese pasta is a traditional Italian dish, which consists of dry or freshly prepared pasta (in our opinion pasta) and Bolognese sauce. I must say that Italians are very fond of preparing various sauces, so pasta in Italy is served in every institution, without exception, the only difference is that each chef prepares pasta sauces in his own way, and the best chefs have their own signature sauce. But the recipe for pasta bolognese is known to every Italian.
We, without further ado, will prepare one of the most famous sauces at home, which is now also very fashionable with us, Bolognese sauce.
Bolognese pasta recipe.
For cooking, we need the following ingredients:
- minced pork (250 g)
- ground beef (250 g)
- pancetta (100 g), in our opinion, a slice of bacon
- 300 ml of milk
- 300 ml of dry wine (red or white does not matter)
- two tablespoons of tomato paste
- two cans of canned tomatoes
- two cloves of garlic
- 25 g butter
- olive oil
- onion 1 pc.
- carrots 1 pc.
- celery 1 stalk
- two teaspoons of fragrant herbs (choose to taste)
- Parmesan cheese
- 400 g of Italian pasta (if suddenly there was no Italian pasta at hand, then you can use domestic pasta, it turns out no worse).

We take a large pot, put on the fire, pour one tablespoon of olive oil there, add the butter and wait until it dissolves. Next, put finely chopped vegetables (carrots, celery, garlic) there. Vegetables should be so finely chopped that when they are fried and stewed, dissolve in the sauce, and only their taste remains. Add the pancetta and stir slowly until the vegetables are soft.
After that, put the minced meat in our sauce in turn, first one, then the second. The meat should be well cooked to a pink crust, but not cooked. It is important! Another point: the stuffing should be well mashed. You can use a wooden spoon to get rid of lumps.
The next step is to add liquids, this is milk and wine. This is also done separately and gradually. In general, in the preparation of sauces it is important not to rush. This often takes a lot of time, but since you started to make the sauce, then do it right. Bolognese pasta recipe takes about 3 hours.
So, add the milk. The fire must be reduced, pour the milk, then increase the fire and let the mixture boil. When milk is absorbed into the meat, wine can be added. In the same way, increase the heat and let it boil.
Then weaken the fire, add two tablespoons of tomato paste and canned tomatoes (be sure to peel them before skins). Mix well, knead the tomatoes until smooth, add water (400 ml) and spices. All this is gradually stirred and brought to a boil.
After that, make a very small fire and cook the sauce for another two hours, stirring occasionally and opening the lid to let off steam. As a result, almost all of the water is boiled and a thick homogeneous aromatic sauce remains.
In the meantime, your sauce is cooked, you can start cooking the paste itself. In a large pot of water, put on a fire and bring to a boil, add salt to taste and put the pasta. So that they do not stick together, you need a sufficient amount of water and constant stirring, especially until they boil. After boiling, you can make the fire less and leave them to cook for another 15 minutes (time depends on the pasta variety).
Then pass the finished pasta through a colander, remove the water, and put the pasta in a saucepan with sauce. Mix everything well so that all pasta turns pink. Spread in portioned plates and decorate with a sprig of greenery. Pasta with bolognese sauce is ready. Enjoy your meal!
