Recipe 1
The salad recipe for wild rice, celery and walnuts contains a description of how to cook celery stalks to make a wonderful dinner dish. You will need products for 6 servings:
For salad:
- 1 liter of water (preferably chicken stock or vegetable stock);
- 1 cup of wild rice, washed;
- 1/3 cup walnuts, lightly fry and chop;
- salt to taste;
- 3 stalks of celery are cut diagonally (about 1 ¼ cup is obtained); the best part for making salad is always the inner stem of celery; recipes that do not require heat treatment, recommend not using the outer stems of the plant in its raw form;
- ½ cup chopped fresh parsley;

- 3 tablespoons of walnut oil;
- 3 tablespoons of olive oil;
- 2 tablespoons of yogurt or plain fat-free yogurt.
In a large pan, bring water or broth to a boil, add salt and wild rice. Reduce the heat, cover and simmer for about 40 minutes or until tender. Drain the water, cool and spread in a large bowl to the rest of the salad ingredients. Mix lemon juice, vinegar, garlic, salt and pepper. Beat the olive oil, walnut, kefir. Season salad. The taste is adjusted with seasonings and served to the table.

For an Italian salad with mushrooms, the inner stem of celery is also suitable . Recipes for preparing cold dishes from raw stems can be stored in the refrigerator. Ingredients for 4 servings:
- 250 g cremini champignons or white champignons, cut very thinly;
- 4 stalks of celery, from the middle, cut very thinly;
- 2 tablespoons chopped fresh parsley;
- 1 tablespoon chopped green onions;
- salt;
- 1 ½ tablespoons of lemon juice (can be replaced with 1 tablespoon of lemon juice and ½ tablespoon of white wine vinegar or sherry vinegar);
- ¼ cup olive oil;
- freshly ground pepper;
- 60 g of Parmesan cheese, rubbed coarsely.
Stir together: mushrooms, celery, parsley, green onions and season with salt and pepper. Lemon juice and olive oil are mixed, added to vegetables and mixed. Immediately before serving, mix again with Parmesan cheese. Salad can be prepared in advance, but should be seasoned with sauce and mixed with cheese before serving.

The original Waldorf style salad combines apples, walnuts, raisins, a celery stalk. Raw celery recipes are for healthy diet foods. 6 servings of salad are prepared from the following products:
for salad:
- 2 Fuji apples ;.
- 2 teaspoons of fresh lemon juice;
- 1/3 cup walnuts, kernels are divided into 4 parts and lightly fried;
