Summer has come, which means that there is an opportunity to spoil yourself with yummy vegetables. Baked eggplant with cheese and tomatoes - probably one of the most beloved dishes in many families.
Required: a couple of large eggplant, 100g. hard cheese, garlic, herbs and 4 tomatoes. Eggplant is cut into 2 pieces lengthwise and boiled for a quarter of an hour in salted water. Tomatoes are cut into slices, cheese is rubbed on a fine grater. Two garlic cloves finely chopped and mixed with cheese. Boiled eggplant is removed from the water, blotted with paper towels and laid on a greased baking sheet. Top with tomato slices, salted, sprinkled with cheese, garlic and herbs. Bake for 20 minutes at a temperature of 200 degrees.
Baked eggplant with cheese and tomatoes on skewers
Required: eggplant - 2-3 pcs., 3-4 large tomatoes, 3 cloves of garlic, a couple of spoons of mayonnaise, 2 eggs, 200 gr. cheese, salt and herbs. Eggplant is cut into rings 1 cm thick, salted and left for 15 minutes. The garlic is passed through a press, mixed with mayonnaise and finely grated eggs and cheese. Tomatoes are cut into slices, after which the vegetables are collected on skewers - an eggplant circle, a layer of cheese, a tomato ring, cheese again and cover with another eggplant circle. Pyramids are sent to bake in the oven at a minimum temperature of 40 minutes.
Eggplant with tomato and garlic
For cooking you will need: a couple of eggplant, hard cheese - 100 gr., 3 large tomatoes, 3 wedges of garlic and mayonnaise. Eggplant and tomato cut into circles. Eggplants are spread on a baking sheet, coated with oil, greased with mayonnaise and covered with a tomato ring. Grated cheese is mixed with finely chopped garlic, then sprinkled with tomato rings. Eggplant is baked in a preheated oven for a quarter of an hour at a temperature of 220 degrees.
Original eggplant baked with cheese and tomatoes
For cooking, you need: 200g. feta cheese, a couple of large tomatoes and two eggplants, mayonnaise and hard cheese, about 150 gr. They wash the eggplants and make 2-3 incisions along them, not reaching the end by a couple of centimeters. Brynza is cut into thin long slices, and tomatoes are sliced. Then they are laid between layers of eggplant, so that an alternation of ingredients is obtained: eggplant, feta cheese, tomatoes. Above them, they are liberally greased with mayonnaise and sprinkled with grated cheese.
Italian style eggplant baked with cheese and tomatoes
Required: eggplant - 4 pcs., Large tomatoes - 3 pcs., 200 gr. mozzarella cheese, a bunch of fresh rosemary and olive oil. Eggplant is washed, cut lengthwise into 2 parts and rubbed with salt. Tomatoes are put in boiling water for half a minute, and then peeled from them. After 20 minutes, the eggplant is washed off the salt and made from them "boats", taking out the pulp from the middle with a spoon. Then the cut pulp is crushed, tomatoes are added, cut into tiny cubes, and a couple of sprigs of rosemary. Stir and prepare the prepared eggplant with the resulting vegetable mixture. Baking sheet is poured with olive oil, βboatsβ are laid out on it. A pair of small slices of cheese is placed on each rug. Preheat the oven to 200 degrees and send a baking sheet into it for 20 minutes.
Eggplant with minced meat is no less tasty than eggplant baked with cheese and tomatoes.
Required: a couple of large eggplant, a few leaves of basil (or dried herbs), 200 gr. mozzarella cheese, 300 gr. minced meat, 3 large tomatoes or 4 tablespoons of tomato paste. Tomatoes are poured with boiling water, peeled from them and crushed in mashed potatoes on a grater or blender. Minced meat is fried in a pan, adding grated tomatoes or tomato paste to it, add a little water and stew for another 5 minutes. The eggplants are cut into circles, fried in olive oil and put in a baking dish. Top with basil and a layer of minced meat, then eggplant and minced meat again. Sprinkle with grated cheese and put in the oven for half an hour at 200 degrees.
