Winter treat with beans: changing traditions

The usual recipe for lecho consists of tomatoes and sweet pepper. This is a taste familiar from childhood. But there are several modified cooking options. If you add a new ingredient, such as beans, you get a great vegetarian dish, which can also be used as a side dish for meat dishes. Lecho is made from red or green green beans. The principle of preparation is simple.

Red Bean Lecho

Beans are prepared according to the same principle as a traditional dish. You will need two glasses of raw red beans, 3.5 kilograms of sweet pepper, a kilogram of carrots, a kilogram of onion, 200 milliliters of vegetable oil, 3.5 liters of tomato juice (can be replaced with twisted tomatoes), three large tablespoons of salt and two tablespoons of sugar. We start with cooking beans, as this process takes a very long time. We put a pot of water on the fire and put the beans in it. Cook until tender, adding a little salt. We wash and clean the remaining vegetables. Lecho for the winter with beans does not require small chopping ingredients.

Cut the pepper into large strips, onion into half rings. Carrots can be cut into strips, or grated on a coarse grater. Now pour the tomato juice into the pan and let it boil. After that, add vegetable oil and cook over medium heat for another 15 minutes. Then put in the pan all the remaining ingredients, including beans. We make the fire minimal, but in order to lie down for the winter with beans it was boiling. Cook it for about 30 minutes. Lastly, add salt and sugar. We wait another 5 minutes and lay the lecho in jars, which we previously sterilize and sterilize. We roll containers with lids and wrap them up. When the summertime has cooled with the beans, it must be moved to a room with a lower temperature.

Green Bean Lecho

This is another cooking option. The recipe for lecho with beans is designed for about 9 cans with a volume of 0.7 liters. For cooking, we take 3 kilograms of green beans, 5 kilograms of tomatoes, half a kilogram of sweet pepper and carrots, two large spoons of salt, sugar and vinegar, 2 heads of garlic, 150 grams of vegetable oil and fresh herbs (oregano, dill, parsley). We start by preparing the basics. It will consist of tomato. To do this, we sort and wash the tomatoes. Then we cut them into pieces and pass through a meat grinder. Pour the tomato into the pan and cook for about 20 minutes. In the meantime, you can prepare the beans. At the pods we cut off the tips and cut them into pieces, about 3-4 centimeters. Peel the garlic and chop finely. We also peel the carrots and peppers and cut them into strips. In boiling tomatoes, pour vegetable oil and table vinegar. Then pour salt and sugar. All mix well and try. Depending on the sweetness of the tomatoes, the fill can be different in taste. If necessary, add the necessary ingredients. After this, pour the prepared vegetables. Cook for about 30 minutes, but no more. Then add chopped greens and after 5 minutes pour into jars. We roll the winter medley with beans and always wrap it so that all the ingredients are warmed up. We put in a cold place and eat in winter with pleasure.
