Gravy cutlets in the oven

Cutlets have long been an integral part of our diet. By tradition, this dish is everyday for us. We used to think that cutlets come only from minced meat. Many do not know that cutlets can be prepared not only from different varieties of meat (beef, lamb, pork, etc.), but also from seafood, fish, mushrooms and vegetables. Meat patties in the oven with sauce go great with various side dishes. Various vegetables, pasta and cereals are suitable for them. Try cooking the patties in the oven with gravy.

To do this, we need the following ingredients.

For minced meat:

  • a kilogram of meat (a third of beef, two-thirds of not too fatty pork) - 1 kg;
  • 4-6 slices of white bread;
  • 200 ml of milk;
  • 2-3 onions;
  • 5 cloves of garlic;
  • vegetable oil;
  • one chicken egg;
  • salt, ground pepper, paprika, chili, curry - to taste;
  • breadcrumbs.

For gravy:

  • 2 tbsp. ketchup, sour cream and vegetable oil;
  • about 100 ml of liquid (dry wine or water, where lemon juice is added);
  • salt, herbs, spices - to taste.

So, in order to cook cutlets in the oven with gravy, the meat must be washed, cut into pieces.

Bread needs to be soaked in milk so that the milk covers it a little. Roll the meat through a meat grinder. Peel the onion, rinse in cool water and chop. Then crank soaked bread, minced meat, onions and garlic cloves through a meat grinder. It should be scrolled alternating between the components for a better uniformity of the stuffing.

Milk left over from soaking the bread can also be poured into minced meat. Then add salt, vegetable oil, spices, an egg, finely chopped greens. All this must be thoroughly mixed (best with your hands) until a homogeneous mass is obtained. From the minced meat, you need to form the meatballs of the desired shape (round, oblong, sticks, etc.).

Pour a little breadcrumbs onto a plate so that they cover the plate with a thin layer. Forming a cue ball, you must each roll on two sides in breadcrumbs, while at the same time correcting the shape of the cutlets with your hands. Do not make the breading layer thick. To prevent the cutlets from falling apart, it is recommended to fry them in a hot frying pan (so that a crust forms on the cutlet and juice does not flow out of it), so they remain whole and juicy. Of course, you can serve cooked meatballs in the oven with gravy, but it is better to cook meatballs in the oven in sauce. It will help to make meatballs more piquant and delicate in taste.

For the simplest sauce, it will be enough to mix ketchup (or tomato paste with sugar), sour cream, water or wine in a bowl, adding pepper, herbs and salt. Then pour this mixture with fried cutlets on both sides. Then stew the patties in the sauce should be under the lid.

To check if the cutlets are ready in the oven with gravy, you can cut the largest cutlet into two parts. The meat in the finished cutlet should be sufficiently monophonic, without the presence of pink veins, and the juice that stands out when pressed should be transparent.

Such cutlets can be used with almost any side dish: fried and boiled potatoes, pasta, buckwheat, rice, steamed vegetables, etc. Another important advantage of such cutlets is that you can pour a side dish with sauce, which makes the dish much tastier!

What if you do not like meat? Cook the carrot cutlets in the oven, as this dish is healthy and tasty.

For this we need?

1 kg of sweet carrots, 1 medium-sized sour green apple, 150 ml of low-fat milk, 2 tablespoons of rice flour, several pieces of dried apricots, 1 large egg.

Carrots need to be peeled and rubbed on a fairly fine grater. On a coarse grater we rub an apple peeled from the skin.

Pour milk into the pan, put the carrot, apple, mix everything and simmer. At the end, add rice flour gradually, kneading thoroughly until the mass thickens. Then it is necessary to cool slightly, add the egg and mix well. You can add cinnamon. Pre-steamed dried apricots should be cut into small pieces. Mix everything, sculpt the patties with your hands, put them on a baking sheet, which must be covered with parchment or a silicone rug. We put 40 minutes in the oven, preheated to 200 degrees. Serve with sour cream.
