Air brushwood: recipe for cooking

Brushwood is an airy, thin, almost transparent cookie. It is very fragile, delicate and crumbly. Ready dessert is usually sprinkled with powdered sugar or watered with honey syrup. And now two recipes: crispy air brushwood and soft air brushwood.

Crisp brushwood

To prepare the dough, you need the following products:

  • cognac - 60 ml (you can take vodka);
  • water - 1/2 liter;
  • olive oil - 60 ml (two tablespoons of butter can be);
  • flour - 5 glasses;
  • salt - to taste (can not be put);
  • flavourless vegetable oil - 1,5 l.

To prepare the dough, you need a mixer, which can be replaced with a whisk.

Procedure:

  1. Pour water into a bowl, gradually stirring with a whisk or a mixer, add oil mixed with cognac into it, then add flour in small portions.
  2. Knead so cool dough. It is important to knead the dough on the table without flour, you just need to grease the surface of the table and hands with vegetable oil, and it will not stick. If you knead with flour, the oil in which the brushwood will be fried quickly burns out, turns black and worsens the taste of the finished products.
  3. Cover the dough with a napkin or towel and let stand a little.
  4. After a few minutes, knead the dough again and rest again.

Divide the dough into several portions and roll them very thinly, to a translucent state. The test can be given any shape. The easiest way is to cut into tapes, then each tape into pieces 15 cm long. In each such piece in the middle, make a cut and thread the ends into it.

Powdered sugar

Frying brushwood is best in a large-capacity pan with a thick bottom. The ideal option is a cauldron. When frying products should be completely immersed in oil, and not fry, as in a pan.

Procedure:

  1. Throw dough pieces into boiling vegetable oil.
  2. When the brushwood turns yellow, take it out with a slotted spoon and spread it on a napkin to remove fat.

After that, transfer to a large plate and garnish with icing sugar. The brushwood is airy and crumbly ready.

Rosettes

If you want a more refined form of brushwood, you can make beautiful roses out of the same test. It may seem complicated, but in fact, everything is much simpler.

Procedure:

  1. Divide the dough into portions in the same way as in the previous recipe, and roll it very thinly.
  2. Cut thin layers into long strips about 4 cm wide and about 40-50 cm long. It is best to cut the dough into curly cuts.
  3. Pour oil into a large pot and heat it.
  4. Take one end of the tape with a fork, lower its boiling oil, holding the other end with your hand, and carefully wind it around the fork.
  5. Air brushing can be removed when it changes color to light yellow. First, you need to put it on a towel or napkins to get rid of excess fat.
  6. Finished products are poured with honey syrup and sprinkled with crushed nuts, cinnamon and sesame seeds.

Honey syrup

To prepare it, you need the following products:

  • 300 grams of sugar and natural honey;
  • 300 ml of water;
  • 60 ml of lemon juice.

Cooking:

  1. Combine honey, water and sugar. Put cook on low heat for 20 minutes. Do not forget to constantly stir.
  2. When the syrup thickens, add the lemon juice and mix.

Powder will require 200 g of walnuts, 100 g of sesame seeds and a tablespoon of cinnamon. All these ingredients need to be ground and sprinkled with air brush over honey fill.

Soft brushwood

This version of cookies is cooked on kefir, so it turns out soft.

What do you need:

  • two glasses of kefir;
  • two eggs;
  • 3 tbsp. l oil rust .;
  • 4 cups flour;
  • 4 tbsp. l Sahara;
  • ½ tsp of soda and salt.

Order of preparation:

  1. Grind sugar with eggs in a bowl.
  2. Pour in kefir and put the quenched soda.
  3. Gradually add flour to this mixture. It is very important not to shift it. The finished dough should be soft and not stick to your hands. Let the dough rest for about 30 minutes.
  4. Divide the dough into two portions, each roll into a thin layer.
  5. Cut the layers into strips about two centimeters wide and diagonally oblique.
  6. Make cuts in the center of each strip and twist both ends or one.
  7. Pour vegetable oil into a deep bowl.
  8. When it boils, throw the dough pieces into the pan and fry until cooked so that the dough is completely in oil.

Put soft brushwood on a towel, garnish with icing sugar.

Kefir cookies can be made crispy if you include vodka or cognac in the recipe.
