"Zatiruha" is a liquid porridge from brewed flour, more reminiscent of the consistency of soup. This dish belongs to the peasant cuisine, prepared by the poorest segments of the population. It is simple in the method of preparation and the number of ingredients, but so tasty that it is firmly entrenched in the cuisine of many peoples. In Russia it is called "Zatirukha", in Belarus it is known as "Zatsirka", in Ukraine - "Zatirka", in the countries of the East - "Umach ashi". There is an interesting legend related to the origin of this dish. One woman who served as a cook with rich people, after kneading dough while baking bread, her owners never washed her hands. And all the dough that was stuck on them, already at home, she rubbed into crumbs and cooked bread for her children. "Zatirukha", the recipe of which first appeared in the 15th century, at one time saved many peasants from starvation. Today it is cooked in milk, but can be boiled in water and in broth.
