This dish can be cooked even in sauce (sour cream or tomato), it all depends on your preferences.

Minced hedgehogs with rice are good because they cook quickly and are suitable for any person. It's no secret that older people have problems chewing solid food, young children will also not be able to cope with a rough piece of meat on their own, but this dish is "tough" for all age categories. To make the hedgehogs tasty and healthy, it is better to cook the minced meat yourself. Home-made mince will come out not much more expensive, but there will be many times more benefits from it.

To make the hedgehogs from minced meat with rice juicy, you need to choose pork and veal in equal proportions, scroll them through a meat grinder with onions and, at the exit, add a little bun pulp soaked in warm milk. If desired, they can be cooked on any available meat: rabbit or chicken, turkey or duck. Since rice goes well with fish and seafood, it’s possible for variety to be made from oily fish or squid meat, also scrolled in a meat grinder, only without adding bread to milk.

Minced hedgehogs with rice. Ingredients:

- 150 g of young pork, 150 g of veal;
- 90 g of steamed rice;
- two medium carrots;
- a small Bulgarian ripe pepper;
- a pair of fleshy tomatoes;
- purple onion;
- three cloves of purple garlic;
- large selected egg;
- a pair of pieces of sliced ​​unsweetened long loaf;
- parsley and dill bunch;
- 50 g of cow's milk;
- coarse salt and ground pepper.

Minced hedgehogs with rice. Cooking:

1. Place two containers of water on the fire. Big is needed to cook koloboks, small for cooking rice. Rinse the rice and send in boiling water with salt for five minutes, then pour it into a colander to dry the rice.
2. Soak a couple of pieces of sliced ​​loaf in warm milk. While the roll is swelling, wash and pass the pork and veal through the meat grinder, there you send the purple peeled onion.
3. Add to the resulting stuffing, squeezing well, the middle of the swollen pieces of the loaf. Sprinkle with salt and pepper, break the perfect egg there and knead well.
4. Stir the minced meat with rice and roll the hedgehogs (koloboks), dip them into the boiling and salted water of a large pan. Water should hide the hedgehogs.
5. Peel and rub the carrots, scrape the pepper from the seeds and cut into small cubes (if the pepper is large, you need half).
6. Send crushed and peeled garlic, carrots to the pan, sauté a couple of minutes and add pepper, after another three minutes lay the tomatoes, chopped with medium cubes, simmer under the lid.
7. When the vegetables are slightly stewed, add finely chopped greens. Then pour everything into a pan with boiling hedgehogs.
8. Minced hedgehogs with rice are cooked for a total of not more than forty minutes. You can serve not only with the broth, but also pouring sour cream on top.

The recipe for hedgehogs in the oven differs little from the previous one, the only difference will be the method of preparation. They can be baked in foil, under sour cream, cheese, in tomato. If you don’t know how to cook hedgehogs in a sauce, you can add the finished sauce to the next recipe or make it yourself at home.

Hedgehogs with meat and rice in the oven. Ingredients:
- 120 g of fresh pork and 120 g of fresh beef;
- 75 g of steamed rice;
- a pair of pieces of unsweetened loaf;
- 50 g of cow's milk;
- one large table egg;
- a pair of purple cloves of garlic;
- half of the purple bulb;
- a piece of cheese weighing up to 220 g;
- sifted flour for frying;
- coarse salt and ground pepper as preferred.

Hedgehogs with rice and meat in the oven. Cooking:

1. Rinse the meat and pass through a meat grinder. Peel the onion and send it there.
2. Heat the milk and spread the pieces of bread there.
3. Cook a little rice and throw it in a colander.
4. Stir the minced meat with rice, add crushed garlic, coarse salt and ground pepper, squeeze the bun and add the middle to the minced meat.
5. Roll average hedgehogs, lightly dust with flour, flatten a little on both sides for better frying. Take out a baking sheet with a non-stick rug or just grease it with oil. Spread, hedgehogs and clean in the oven for half an hour.
6. After thirty minutes, take out a baking sheet, grease the balls with the released fat and sprinkle with cheese grated in any way. Remove for another nine minutes, when the cheese darkens slightly - you can get it. Serve hot with sour cream or tomato sauce.

If you don’t like cheese, you can put the hedgehogs in a container, cook in the oven and pour them in sour cream, diluted tomato paste in twenty minutes.
