Ossobuco, the recipe of which we will consider in our article, is an original Italian dish. This beautiful overseas word translates as "holey bone." Traditionally, ossobuco is prepared from beef drumstick, which is divided into several equal parts. According to the Italian cooks who invented this dish, ossobuco is best served with risotto. Our culinary experts believe that it goes well with vegetables. However, more about everything in our article.
Ossobuco
The recipe for this dish is absolutely uncomplicated. The main thing is to do everything as indicated in it. So, what products do we need to make ossobuco?
Ingredients
It is necessary to take:
- Beef drumstick - 1500-2000
- Large onions - 2 pcs.
- 3 ripe red tomatoes
- Big ripe lemon.
- Garlic Slices - 3-4 pcs.
- Butter and olive oil - 80 g each.
- Celery.
- Parsley.
- White wine and beef broth - 300 ml.
Step cooking
We divide the beef shank with bone into 4 equal parts. The bone must remain. We take a frying pan, pour olive oil there, melt the cream and place our beef pieces. We turn on the fire as large as possible so that the meat is covered with a delicious crust. Fry on both sides, about 5 minutes each.
The next step is the wine. It should be poured into a pan with meat, reduce the heat and wait until it evaporates by half. Further, the ossobuco recipe recommends doing onions and celery. We cut our vegetables into medium pieces and send them to a frying pan. We cook them until soft. After that we throw vegetables to our beef with wine.
We cut the tomatoes in half rings and add to the ossobuco. The recipe involves preparing the beef broth in advance . But if not, then you can add plain water. Salt to taste and pepper (in general, there is no need for these ingredients in the traditional recipe, but, as a rule, our people are used to salted food, so we will not lose sight of this option in this recipe). So, reduce the fire to a minimum, cover the dish with a lid and leave to simmer for about 1.5-2 hours. Be sure to follow the process and, if necessary, add broth or water.
Next, proceed to cutting the lemon. But first, it should be placed in a mug with boiling water for 30 seconds. Then remove and grate the zest with a grater.
The next step is parsley and garlic. Finely chop everything, place it in a mortar and grind with a pestle. Add lemon zest to them. Mix well. The resulting mixture is called gremolate. This is traditional beef seasoning for ossobuco. It is very aromatic and unusual in taste. Without gremolata, our dish will not have that same Italian flavor.
After that, open the lid and look at our meat. It should easily fall behind the bone. Once this has happened, you can call everyone to the table. Ossobuco from turkey in the oven
This dish is simply amazing in taste, and its aroma cannot be expressed in words. Having prepared ossobuco (recipe below), you will not be able to resist its tenderness and sophistication. Discover a piece of mysterious Italy!
Ingredients
You will need:
- Steaks from turkey drumstick - 1 kg.
- Large onion - 2 pcs.
- Larger carrots - 2 pcs.
- Garlic Slices - 5 pcs.
- Red wine - for each steak 50 ml.
- Chicken broth or water - 150 ml.
- Tomatoes in their own juice.
- Red bell pepper - 1 pc.
- Larger lemon.
- Flour for steak steak.
- Butter and olive oil for pan lubrication.
- Parsley.
- Thyme - a few twigs.
- Razmarin.
- Bay leaf.
- Salt.
Step cooking
First, take our pieces and rinse them under running water. Use paper towels to dry the turkey. We put the pan on the stove, turn on the big fire, add olive and butter. We are waiting for the last to melt. As soon as this happened, lay out our steaks. But before that you should roll them in flour (the traditional ossobuco recipe does not require the use of flour, but some cooks still recommend using it to achieve a beautiful crust when frying). So, fry the meat from two sides to a beautiful brownish-golden color. This should take no more than 10 minutes.
After the meat is fried, transfer it to a baking sheet covered with foil.
In a frying pan, separately fry finely chopped onions, then carrots cut into strips, followed by garlic passed through a crush. Mix everything, fry for a few more minutes and add to the baking sheet to the meat.
Peel and cut into small strips. In a pan greased with olive oil, spread our red vegetable and stew it for several minutes. Pepper should become soft.
It should be noted that ossobuco in Milan, the recipe of which we examined in detail in our article, does not involve the use of pepper, but, according to some cooks, this red vegetable will add to our delicacy a sweetness that is sometimes lacking in meat dishes. However, if you do not really like pepper, then adding it is not necessary.
For each piece, pour 50 ml of wine. After that, pour the indicated amount of broth or ordinary salted water into the baking sheet. The broth should be so much that the meat is covered 1 finger above its level. Spread tomatoes and peppers on top. Sprinkle with thyme, rosemary, bay leaf and salt.
Place the baking sheet in the oven for 1.5 hours at a temperature not exceeding 160-170 degrees.
In the meantime, our ossobuco (a recipe with a photo is described in detail in our article) is being prepared, you can start cooking gremolata. To do this, chop the parsley and garlic. Soak the lemon in boiling water. Using a fine grater we βextractβ the zest. Mix it with parsley and garlic. When the meat is cooked (it should be easily separated from the bone), it must be sprinkled with gremolata.
It should be remembered that all liquid must be evaporated during cooking in the oven, so additional time may be required.
