Carbonara pasta: recipe with and without cream

Italy is the birthplace of famous dishes from flour products. One of the most common traditional dishes among them is pasta. Pastes are distinguished by sauces, some of which are considered real culinary masterpieces. Chef’s especially delicious recipes are kept secret and offered to visitors to their restaurants. Culinary masterpieces are not easy, so at home it’s easier to cook such a dish as carbonara paste , the recipe of which will be given below.

Various recipes can be used to prepare the dishes, as each housewife likes to experiment and add something new. So, for example, there is a carbonara paste recipe with and without cream.

Carbonara pasta with cream
The recipe requires the following products: fettuccine, olive oil, cream, herbs (parsley and basil), eggs, bacon, hard cheese (preferably Parmesan).

In order for the dish to be prepared in accordance with all standards of Italian cuisine, it is necessary to properly boil fettuccine, which can be replaced with ordinary spaghetti. To avoid sticking, many add a little vegetable oil during cooking or rinse the finished product with water. Italian cooks do not even suggest such "folly." The sauce is prepared so that the fettuccine or spaghetti are soaked, which ensures the absence of adhesion, then they will not need to be washed. Thus, in order for the carbonara paste recipe to be prepared correctly, you need to boil spaghetti or fettuccine in salted water, pouring a packet into boiling water and holding for 5-7 minutes. Then the water is simply drained.

Separately, fried bacon, cut into thin strips, adding a little olive oil, so beloved in Italy. It is advisable to choose a deep dish, since later it will be necessary to shift the finished flour product there, which is done when the bacon is fried. There, add the chopped greens chalk and mix everything.

It is also necessary to mix the cream (30% fat) - 1 cup will be enough - with egg yolks and parmesan, grated on a fine grater. The mixture is poured into hot bacon with spaghetti and allowed to fry for several minutes. Thus, carbonara pasta recipe with cream is ready.

Carbonara paste without cream
The recipe for carbonara paste without cream is also simple. Instead of bacon, you can use smoked loin or brisket, which is cut into small cubes. In a deep bowl, fry the garlic passed through the press and after 5 minutes prepared meat is added to it. For frying use exclusively olive oil. The process is continued until a golden crust appears.

Separately, boil spaghetti or fettuccine, not forgetting the recommendations of Italian cooks, and add them to the meat, continuing to fry with continuous stirring for about 30 seconds.

Now repeat the procedure for preparing the fill. Only in this case, the carbonara paste recipe does not imply the use of cream: just beat the eggs whole and add some salt to them. The mixture is poured into spaghetti and, not forgetting to turn off the heat, mix, pouring finely shredded cheese. The total amount of cheese is 100 g, first you need to add only half the dose.

Next, you need to wait until the eggs are fried and add the rest of the cheese, then mix well and the carbonara paste recipe can be considered complete.

Regardless of the cooking method, any carbonara paste recipe requires a hot meal. Top it can be decorated with basil leaves and parsley, if not added during cooking. Such a simple recipe will take a little time, but the result will please the whole family or your loved one.
