Before considering the composition of the pastille, I want to talk about what this product is in general.

Today, this product can be made from completely different components. For example, very often pastille is made from whipped apple puree (fruits are better to take sour). In addition, it is customary to prepare the said sweetness from the pulp of the following berries: mountain ash, lingonberries, raspberries and currants.
Also, sugar should be included in the composition of the pastille. After all, without this ingredient, it will be sour and tasteless. By the way, before the 19th century, instead of sugar, ordinary honey was added to the marshmallow.
What other ingredients does homemade marshmallow include? Making such a treat at home, some housewives put egg white in it. This component is optional. However, it was due to him that the pastille became much brighter.
Where is it dried?
Previously, berry or apple marshmallow, the recipe of which we will consider later, was made exclusively in the Russian oven. This heat treatment is best for preparing this sweet. After all, the oven gives the effect of gradually fading heat, due to which uniform drying of mashed potatoes, honey or sugar, as well as egg white is ensured.
Today, such a product is dried in the sun, in a special dryer or in the oven. If you decide to use the latter option, then you should know that it is necessary to cook pastille in this way for a long time at a minimum heat.

Making sweets at home, you always know what composition it has. However, this can not be said about the store delicacy.
So what ingredients does the commercially available marshmallow include? The composition of the product should always be indicated on the packaging. As a rule, store pastille includes the following components:
- fruit puree (e.g. applesauce);
- granulated sugar;
- wheat flour or starch (for fastening the product);
- animal products, namely chicken eggs.
Among other things, some manufacturers add dyes and flavorings (natural or synthetic), flavor enhancers, preservatives, emulsifiers and fillers to this product.
How to make a pastille at home?
Cooking homemade pastille takes a lot of time. However, the result will surely please you.
So, we need:
- Antonovka apples - about 2 kg;
- granulated sugar - 200 g.
Cooking process
To make homemade marshmallow, it is necessary to wash all the fruits well, and then peel them, put them in a baking dish and pour ½ a glass of water. In this form, the ingredients must be sent to the oven for 40 minutes. Cooking apples is desirable at a temperature of 170 degrees.
After the fruits become soft, they should be removed from the oven and rubbed through a sieve. After receiving a thick puree, it must be boiled for a third, put on a small fire. This process can take about 30 minutes. In this case, all the ingredients should be stirred periodically. As a result, you should get a very thick and slightly golden mass.
To make homemade pastille airy and light, sugar must be added to the puree, and then beat it with a mixer.
After the described actions, the apple mass must be placed on a baking sheet, which should be covered with parchment in advance. It is advisable to spread the mashed potatoes with a thickness of 2-3 centimeters. If in the future you are going to roll the dried pastille into a tube, then the layer of apple mass should not be more than 5 millimeters.
Ready-to-cook ready-to-cook foods can be dried in the sun. But in this case, the pastille will be ready only in a few days. If you need to get sweetness today, we suggest placing the filled baking sheet in the oven. It is advisable to cook such a pastille with a minimum power of about 11 hours. At the same time, it is advisable to keep the oven door ajar.
After the pastille has dried, it must be removed from the pan with the parchment. After placing the product on the board with the paper up, cover it with a damp towel. After a few minutes, the parchment will depart by itself. In the future, the pastille can be sprinkled with powdered sugar, cut and rolled into rolls. It is desirable to store them in a refrigerator in a bag.
