Strudel with minced meat is one of the favorite delicacies in Russia. There is a wide variety of recipes, including both poultry and beef, as well as various vegetable additives. Consider two original recipes step by step.

Forcemeat strudel: recipe

Today we will analyze a rather original version of your favorite dish. To prepare it, you will need to take the following ingredients:

  • ground beef - 0.5 kg;
  • egg - 1 pc.;
  • medium-sized carrots - 1 pc.;
  • rosemary - 4-5 branches;
  • celery stalk - 1 pc.;
  • green peas - 80 g;
  • garlic - to taste;
  • Portobello - 2 pcs.;
  • puff pastry - 0.5 kg;
  • flour (optional);
  • olive oil.

Cooking step by step

Step 1. Preheat the oven to 180 degrees.

Step 2. In parallel, wash the vegetables and peel them. Next, cut into small slices. Finely chop the garlic or use the garlic.

Step 3. In a large pan, heat a small amount of olive oil, spread the vegetables and fry in several stages.

Step 4. Finely chop the rosemary and pour into the pan. Fry with vegetables for about 8 minutes.

Step 5. Add green peas to the total mass, continue to fry for an additional couple of minutes. We shift the vegetables into a container and allow to cool.

Step 6. Add the minced meat to the vegetables and mix thoroughly, you can add spices.

Step 7. Break the eggs into a separate bowl and beat with a fork. Strong zeal is not necessary. Transfer half the beaten egg to the minced meat and mix.

Step 8. Sprinkle the working surface of the table with flour. Roll out the puff pastry in the shape of a rectangle. The dough sheet must be turned with the long side to itself and put the meat, forming from it a semblance of a long cutlet.

Step 9. Along the edges of the dough we pass the second part of the beaten egg, as if lubricating them. Wrap the dough with minced meat in a roll. Wrap the corners of the dough and tighten it tightly.

Step 10. Put the strudel with minced meat on a baking sheet (pre-sprinkled with flour). Lubricate with an egg.

Step 11. Bake in the oven for about 50 minutes, until the surface acquires a golden color.

Step 12. Before serving, bake should be cut into small slices.

To prepare this type of strudel, you will need the following ingredients:

  • minced meat - 0.5 kg;
  • onions - 1 pc.;
  • wheat flour - 300 g;
  • potatoes (preferably red) - 0.5 kg;
  • low-fat kefir - 100 ml;
  • baking powder for dough - 1 teaspoon;
  • chicken egg - 1 pc.;
  • vegetable or ghee;
  • greens to taste;
  • salt.

Cooking step by step

We start preparing strudel with minced meat and potatoes.

Step 1. First, break the egg into a deep container, add kefir and mix thoroughly. Next, add the dough and baking powder, salt if desired. Knead the dough thoroughly.

Step 2. Cover the dough with a towel, remove in a dark space for an hour and a half. The consistency of the dough should be medium.

Step 3. While the dough is languishing, we will take on the stuffing. Add spices and salt to the meat. Mix everything thoroughly. At the same time, we wash the potatoes, peel them and cut into small slices. Peel the onion and chop finely.

Step 4. We take out the dough, roll it into a layer, the thickness of which should not exceed 0.5 cm. We spread the minced meat on it with an even layer, turn it into a roll. We cut the roll into equal shares of 3-4 cm.

Step 5. Return to the potatoes and onions. In a deep pan, add a small amount of oil, warm up. After tossing the onion, fry it until a golden hue is formed. After tossing potatoes, add water. There should be just enough liquid so that the potatoes are completely submerged. Bring to a boil. You can also add spices in this step.

Step 6. Put the strudel on top of the potatoes. Strongly compress the share of the roll is not necessary, as they will soon increase in size. Cover and leave for 45 minutes. If desired, strudel with minced meat and potatoes can be sprinkled with chopped herbs.
