Almost everyone who lived with his grandmother in his childhood or went to visit her will probably agree that the taste of grandmotherās cakes is remembered for a lifetime. Perhaps this is because everything related to childhood seems better, sweeter and more attractive to a person, and maybe the reason is the culinary experience of the older generation, which comes over the years. Be that as it may, today there are even several types of baking, which is directly called āGrandmaās Pieā. They are prepared with various fillings and can be a great treat for tea or coffee.
Pie āGrandmaās napkinā with poppy seeds
A true culinary masterpiece can be prepared using the following recipe. It is called āGrandmaās Napkinā and is prepared with poppy seed filling.
For cooking you will need:
- a tablespoon of good butter (melted);
- 1 tbsp. l yeast (30 g fresh or dry);
- vanilla sugar ;
- 2 eggs (1 egg yolk for coating);
- 1 cup boiled water or warmed milk;
- Ā½ cup poppy seed and sugar;
- 0.5 kg of flour;
- salt.
How to cook a traditional āgrandma'sā poppy seed cake
To get a delicious and beautiful pastry you need:
- pour yeast into a bowl with slightly warmed milk and stir;
- add Ā½ tbsp. l sugar and vegetable oil;
- pour a little boiling water into larger dishes and put a bowl in it for 20 minutes;
- Rinse the poppy seeds, pour 1/2 cup of water and boil until the liquid has completely evaporated;
- sift the flour, mix with dissolved yeast, pour the butter into the dough;
- vigorously knead the dough with your hands for at least 10 minutes, put it in a deep pan, put it in a heated and disconnected oven, near the heating battery, etc., and let rise;
- the finished dough needs to be divided into 2 parts, since 2 pies are obtained from this amount;
- roll out the first part of the dough with a layer of 1.5 cm;
- put the poppy seed filling on the bed, sprinkle with half the sugar mixed with the contents of the āvanillaā bag;

- gently roll the dough into a roll;
- cut from both ends one piece 1 cm thick.
- oil the form and sprinkle with flour or breadcrumbs;
- put the roll into shape, turning into a ring;
- with a sharp knife from the outside, make deep cuts at a distance of 1.5 cm;
- leave two pieces in place, and the third - turn back to the center of the circle;
- repeat the same sequence of actions until the whole roll is cut and turned into a "flower";
- in the āholeā in the center of the ring put one of the previously cut pieces of roll and cover it with a second one from above;
- put the cake in a warm place for 40 minutes;
- beat the yolk and brush the surface of the pie with a pastry brush;
- put in the oven, heated to 170 degrees;
- After 20 minutes, turn off the oven, wait a quarter of an hour and take out the finished cake.
Dry fillings
The recipe for the cake āGrandmaās napkinā has several varieties, with various fillings. For example, instead of poppy seeds, you can take a nut, which is prepared as follows:
- 2 tbsp. l sugar mixed with 4 tbsp. l finely chopped walnut kernels;
- add a little vanilla sugar, cardamom or cinnamon powder;
- pour 2 tsp. cognac;
- everyone mixes.
A delicious āgrandmotherā cake will turn out with coconut filling. For its preparation, you need to take 2 tbsp. l coconut flakes and sugar and mix. You can also just sprinkle a layer of dough on them.
Grandmaās pie: recipe with apples
For such a fragrant and easy-to-use baking dish you will need:
- 150 g butter (must first be melted);
- egg;
- one and a half glasses of granulated sugar;
- 3 apples (preference should be given to fruits of sweet and sour varieties);
- 4 tbsp. wheat, sifted flour;
- half a package of baking powder;
- 1/2 tsp cinnamon powder.
Cooking:
- the oil is mixed with sugar (1 tbsp.) and baking powder;
- add flour;
- knead a rather tight dough;
- the dough is divided into two parts and wrapped in a plastic wrap;
- most of them are put in a cold place, and a smaller part - in the freezer of the refrigerator;
- apples peeled and pitted with kernels are diced and then mixed with cinnamon and 0.5 cups of sugar;
- round shallow form greased with oil and sprinkled with flour;
- most of the dough is laid out in a mold and distributed along the bottom with your fingers;
- lay apple filling on the surface of the dough;
- take out the remaining dough from the freezer and quickly rub it through a coarse grater on apples;
- the oven is heated to 180 degrees;
- send āGrandmaās apple pieā to the oven for 15 minutes;
- served hot.
Old-fashioned jam cake
Few people know that in some provinces of Russia 100 years ago it was a custom to invite son or daughter to the godparents, sending sweet pastries as a gift. Most often, it was āgrandmotherās jam cakeā, which was prepared from the following ingredients:
- 3 eggs;
- 200 g of sugar;
- 1 tsp soda;
- 250 g butter;
- vinegar (1/2 tbsp. l.);
- yolk;
- 200 g of jam (preferably with sourness, for example, cherry, but without stones);
- 3 tbsp. wheat flour.
Making a Traditional Jam Pie
āGrandmaās jam pieā begins to be prepared by grinding eggs with sugar until a lush mass is obtained. Then you need:
- melt butter;
- add vanilla, cinnamon, lemon juice and oil to the egg-sugar mixture;
- mix, pour the slaked soda with vinegar and, adding flour, knead the dough (not too cool);
- divide it into 2 parts (unequal);
- put the majority on a pan or baking sheet and distribute, leaving the sides that will not allow the jam to leak;
- grease the base of the cake with jam;
- Roll out the 2nd part of the dough, cut it into thin strips (2 cm) with a special curly knife;
- put strips on the dough in the form of a "lattice";
- grease with yolk jewelry;
- bake at 200 degrees for about half an hour.
Cake recipe āfrom grandmotherā with cottage cheese
Delicious pastries will turn out if you take:
- 1/2 kg of fat cottage cheese;
- salt (to taste, you can not put);
- 4 eggs;
- 2 tbsp. flour;
- 160 g confectionery margarine;
- quarter tsp soda;
- 1 tbsp. Sahara.
Order of preparation:
- freeze butter;
- sift flour;
- grate frozen oil quickly;
- mix with oil, half sugar, salt and soda;
- grind until the dough turns into crumbs;
- thoroughly grind the eggs and the remaining sugar with cottage cheese (for filling);
- sprinkle a small amount of oil on the mold;
- separate a third from the test;
- pour the remainder into the mold;
- spread the filling on top, and then pour out a third of the dough;
- Preheat the oven and bake āgrandmaās pieā (the recipe can be changed by adding chopped hazelnuts or walnuts) for half an hour.
In general, cottage cheese goes well with raisins and candied fruits, so, as an option, you can recommend adding these ingredients to this pie. From this, it will only become tastier and more piquant.
Ancient āgreat-grandmother'sā recipe
In one of the well-known famous cookbooks in Russian, which is more than 150 years old, the recipe for a sweet raspberry pie is preserved . It can rightfully be called "great-grandmother", since it has been prepared in Russia since at least the 18th century.
For him you need:
- 6 g of dry yeast dissolved in 1.5 tbsp. warm water;
- pour 2 tbsp. cereal flour, mix and wait about 4 hours;
- pour a pinch of salt into the dough and beat thoroughly with a wooden spatula for about 10 minutes;
- Ā½ cup sugar to grind with 2 tbsp. l butter (sunflower oil, if the pies are lean, otherwise melted cream is also suitable);
- add vanilla sugar;
- add flour in such a quantity that it turns out not very cool dough;
- separate part of the dough for the "grate";
- put the remaining dough into a mold and let rise;
- put on top fresh raspberries, strawberries or cherries (pitted) sprinkled with sugar;
- roll the rest of the dough into a thin layer, cut strips and draw a lattice on the surface of the pie;
- put the cake in a preheated oven for half an hour, previously lubricating it with a saturated solution of honey (dissolve honey in boiled and slightly cooled water).
