Let's start cooking Peking chicken. The recipe is very simple, and even a person who begins to learn the world of cooking will surely cope with it.

Cooking begins with chicken breast. Rinse it thoroughly and dry it on paper or kitchen waffle towels. Remove the film, grease and, if any, bones. Cut the fillet into not too small pieces. Remember that during frying, the chicken is greatly reduced in size. Put the pieces in a deep glass or enamel bowl, pour it with soy sauce so that it covers the pieces a little, and leave it in the refrigerator for an hour and a half. Soy sauce will soften and soak the pieces before frying.

After an hour and a half, add 1 tbsp in a bowl with chicken. l starch, 1 tbsp. l flour and mix thoroughly. Mix well so that all the pieces are covered with batter.

Heat oil in a pan. For roasting, you can use both lean and vegetable. Most often, cooks mix vegetable and olive in a 1: 1 ratio. Oil for frying needs a lot to completely cover the fillet pieces. For this, it is better to use a wok or cauldron, and a deep fryer is also suitable.

Add a small finely chopped clove of garlic for a piquant flavor. It will not affect the taste, but it will complement the appetizing aroma not bad.

Add a few tablespoons of ketchup or tomato paste to the sauce. Thicken the sauce with a tablespoon of starch. Stir the ingredients thoroughly. All that is left to complete the Peking chicken recipe is to add the filet fried in oil.

Put the chicken in the sauce, gently mix it with the contents of the pan so that the sauce completely saturates the fillet. Reduce the heat, cover the dish and let it cool for a few minutes.
