This is a national dish of Moldavian cuisine. Moreover, they have been preparing it in this country for more than a century. What are Moldovan pincers? By and large, this is a pie, though it may not be quite ordinary due to the form and method of preparation. In appearance, it looks more like a flattened flat cake, and for the test only the simplest ingredients are needed. These are water, flour and salt. You can add an egg. Very budget option, isn't it? The dough is usually either plain or puff. According to the method of preparation, Moldovan cakes are divided into two types: fried in a pan or baked in the oven.

As for the filling, the most popular at home are pies with cottage cheese and herbs. Sometimes cheese is added to cottage cheese. In second place is a mackerel with a pumpkin. Classical fillings include potatoes, as well as meat and egg.

True, like any other dish that our hostesses liked, this also underwent some modifications in the process of culinary experiments. More in terms of filling. So, they began to make it with beets, carrots, mushrooms. Particularly zealous housewives even learned how to cook sweet pies. In fairness, I must say that in any form, this national Moldovan cake is appetizing in appearance and very pleasant to taste. But this is where we finish our brief educational program and proceed to cooking.

And start with the most common recipe. We will cook pies with cottage cheese and herbs.

Classics of the genre

In principle, there is nothing complicated in cooking this dish. It does not belong to the category of sophisticated dishes served at any celebration. But, of course, it’s better to try once than hear a few times. Therefore, we will not lose time, we proceed to cooking. We stock up:

  • vegetable oil - 3 tbsp. spoons;
  • flour - 1 tbsp .;
  • feta cheese - 200 g;
  • cottage cheese - 300 g;
  • margarine - 150 g;
  • sour cream - 400 ml;
  • egg - 4 pcs.:
  • salt (according to one’s own preferences);
  • any greens (according to your taste).

You will also need a glass of plain boiled water.

Cooking technology

To make pies with cottage cheese and herbs, first, of course, you need to knead the dough. Why do you need to mix vegetable oil, two eggs, salt in an appropriate container, add water, flour, then mix everything carefully. The resulting dough should be covered with a napkin and forget about it for thirty minutes. And take free time to prepare the filling. In principle, this will not take much time. It will be enough to finely chop the greens and mix it with cottage cheese and feta cheese.

Then we make cakes from the dough. Placinda with cottage cheese and herbs (however, like any others) can be round or square. The dough needs to be divided into pieces, each of which is carefully rolled into a very thin, almost transparent layer. Want to have a dish in perfect shape? Then for this, use some kind of “pattern” - a plate or square shape - by applying it to the formation and evenly cutting off the edges. When the dough is over, you will need to take a greased baking sheet. And lay on it future cakes, alternating them with the filling. The algorithm is as follows: first comes the first layer of dough, generously smeared with margarine. Then the second (also sprinkled with margarine). Then the filling is spread out over its entire surface. Then again there are two cakes (also coated with margarine), then the filling. And so on. The last layer should be from the dough.

Preparing such a platter with cottage cheese in the oven, which must be preheated to one hundred and seventy-five degrees. But before you send the cake to the oven, you need to pour it with a mixture of the two remaining carefully beaten eggs and sour cream. The placenta will be ready in forty minutes. Here is a recipe. Placinths with cottage cheese are cut into portions before serving. In Moldova, they are most likely served wine, but we will limit ourselves to coffee or tea. It will be very tasty!

Pumpkin Stuffed Placinde

As it was said above, the cucumber with cottage cheese at home is no less popular than with cottage cheese. To prepare it, take:

  • flour (need 3.5 stacks.);
  • sugar (according to the recipe - 0.5 cups, but the amount can be reduced or increased);
  • one egg;
  • seven tablespoons of vegetable oil;
  • sweet and ripe pumpkin (four hundred grams):
  • salt.

How to cook

Of all the above ingredients (except pumpkin and sugar) and water, we make the dough. As in the previous recipe, leave it alone for half an hour. Grate the pumpkin on a coarse grater and mix with sugar, do not forget that it is not fresh, add a little salt. Then from the dough we roll out one large round layer, in the middle of which we spread the pumpkin filling. If the pumpkin was already very juicy, then the liquid needs to be squeezed out a little. And then we lift the edges of the dough and wrap them, fastening them in the center. Preparing a muffin with a pumpkin in the oven at a temperature of two hundred degrees. The cooking process takes thirty minutes. Before serving, the pie must be cut into pieces.

Potato Placinde

To prepare such a placinda, we stock up:

  • flour (it will take two and a half glasses);
  • soda - 0.5 tsp;
  • vegetable oil (two tablespoons);
  • potatoes - 1 kg.

Still need a glass of clean water, salt (to taste).

Cooking

We dissolve soda and salt in water, add vegetable oil there, and then gradually introduce flour, stirring constantly. If you suddenly overdo it a little with water, causing the dough to stick to your hands, you can add more flour. As a result, the output is a plastic dough. We roll it into a ball, cover it with a napkin and set it aside for thirty minutes.

Peel the potatoes from my skin. You do not need to pre-cook the filling, so chop the raw tubers and salt (but just before we spread it on the dough). If desired, you can pepper a little. But this is not for everybody. Flavor with two tablespoons of vegetable oil.

We divide all the dough into small balls. The fact is that potato muffins are traditionally cooked in a pan. And in appearance they no longer resemble a pie, but rather small pies. We roll out each ball, and try to make it as thin as possible (it is desirable that the thickness does not exceed five, and preferably even three millimeters). We spread potatoes on each layer, turn them in the form of rectangles, fixing the edges of the dough in the center. And immediately send to the pan with preheated oil. As for temperature, you need to choose some average value. In general, there will not be any special problems: the third, or even the second portion will be prepared much faster. After all, after the first it will immediately become clear what temperature is the most optimal. Placinda can be considered ready immediately after they turn golden.

What can I say, not all housewives have tender feelings for the dough preparation process. Well, this stage, in the end, can be skipped. It is enough to purchase a ready-to- cook semi - finished product in the store (this can be either puff pastry or yeast dough) and make mites from it.
