This beautiful, juicy cake from Irina Chadeeva will not leave anyone indifferent. He will need the following products:

For biscuit:

  • eggs - 6 pieces;
  • sugar - 200 grams;
  • ground roasted nuts (any) - 40 grams;
  • salt - a pinch;
  • butter (melted and chilled) - 45 grams;
  • flour - 105 grams;
  • starch - 45 grams.

Creamy cream:

  • yolks - 3 pieces;
  • sugar - 120 grams;
  • butter - 150 grams;
  • corn starch - a pinch;
  • milk - 75 ml;
  • vanilla - to taste;
  • ground roasted nuts (any) - 40 grams;
  • aromatic alcohol (ideally calvados, but cognac is also suitable) - 2 tbsp. l

Filling:

  • large apples - 3 pieces;
  • sugar (preferably brown) - 40 grams;
  • butter - 30 grams;
  • flour - 1.5 tsp. with a slide;
  • ginger - a large pinch;
  • ground cinnamon - a large pinch.

Glaze:

  • icing sugar - 150 grams;
  • aromatic alcohol (ideally calvados, but cognac is also suitable) - 2 tbsp. spoons;
  • lemon juice - 2 tbsp. l

Decor:

  • roasted and coarsely chopped nuts - 150 grams;
  • cinnamon stick - 1 pc.;
  • raisins - 50 grams;
  • medium-sized apple - 1 pc.

Cooking

Cake in the autumn style from this number of products will be 22-24 cm in diameter.

To prepare a biscuit, first of all, line the form with parchment and preheat the oven to 180 o C.

Sift flour with starch.

Separate the whites from the yolks.

Beat the whites with salt until a soft foam and, without stopping whipping, begin to pour sugar. As a result, you get a strong glossy foam that does not flow out of the bowl if you tilt it.

Continuing to beat, add the yolks to the proteins one at a time. It should turn out a lush, slightly yellowish mass.

Add flour with starch and nuts to eggs whipped with sugar, gently knead with a spoon from the bottom up until smooth. Pour in the oil carefully and mix again.

Put the biscuit dough in a mold, flatten and place in a preheated oven.

The finished biscuit has a smooth intense golden color and springy if you click in its center. Remove it from the oven and refrigerate by placing it upside down on a wire rack.

Remove the chilled biscuit from the mold, pack it in a plastic wrap and let it rest for 6-8 hours. This biscuit is universal: not only the autumn cake, the recipe of which we give, will turn out to be successful with it, if you wish, you can use any toppings to taste - for example, chocolate perfectly combines with nuts.

For the cream, mix the yolks, milk, starch and vanilla. Put on a small fire, bring to a boil and cook for a couple of minutes until thick. Remove the resulting syrup from the heat. Cover with a film to prevent the appearance of a crust.

Remove the oil from the refrigerator and let it soften for an hour. As a result, the temperature of the oil should be the same as the temperature of the syrup.

Beat the butter and, without turning off the mixer, gradually add the cooled syrup. It should be a thick, glossy and uniform cream.

Pour the alcohol into the cream and whisk again quickly. Add nuts and mix until smooth.

For the filling in a dry frying pan, fry the flour until golden brown. Pour the flour into a separate bowl.

Peel and dice the apples.

Melt the butter in a pan, add sugar, cinnamon ginger and apples. Cook on low heat until the fruits are soft, while maintaining shape. At this stage, add the toasted flour and mix well. Everything, the filling is ready.

For glaze, mix all the ingredients until smooth and warm a little.

To decorate the cake, cut the apple into thin slices, put in the microwave and cook at maximum power for 3-4 minutes. Sprinkle the resulting chips with cinnamon.

How to collect this autumn cake?

  1. To begin, cut the biscuit lengthwise into 3 equal parts.
  2. Put the cooled apple filling on the bottom layer.
  3. Cover and squeeze a second layer of biscuit.
  4. Lubricate the surface of the layer with half the cream. Squeeze with a third biscuit.
  5. With the remaining cream, grease the autumn cake on the side.
  6. Pour the heated icing on the cake from above, making sure that it does not get on the cream.
  7. Garnish the sides of the cake with chopped nuts.
  8. Stick apple chips on top, lay out a cinnamon stick and raisins.

Before serving, let the cake brew for 3-4 hours.

Here mastic will come to the rescue - a special sugar paste, similar in texture to plasticine. It is possible to mold themed decorations from it and decorate them with an autumn cake, since the recipe allows it - the cream is made on the basis of oil, so the mastic does not melt.

And now you can buy mastic in any department for the pastry chef. It can be either painted or white. The easiest option is to take the material in white, orange, red and yellow. Thinly roll out the white mastic and cover it with the cake, and cut the leaves out of the rest (you can use a special notch or a sharp knife), mold the mushrooms and arrange them picturesquely, decorating the autumn cake.
