Celery Soup: A Simple Recipe

We always pre-think the dining table menu. We want everything to be original, beautiful, tasty, and most importantly, useful. Modern cuisine is very rich and diverse, and I want to definitely try everything. But not all heavy foods are good for our body. Therefore, recipes for light, delicious dishes are now very popular.

We suggest you cook celery soup. It is easily absorbed, so getting up from the table, you will not feel heaviness in the stomach, as is usually the case after consuming fatty foods. The celery plant itself burns fats and gives the body energy, not calories. Celery has a rejuvenating, firming and cleansing effect. Various salads are prepared from it, it goes well with meat, fish, mushrooms, seafood. The recipe for this soup can even be included in the most strict diet. Celery soup is hearty and most importantly healthy.

Use the following ingredients:

  • 1 chicken;
  • 3-4 potatoes;
  • 7-8 stalks of green celery (200 grams);
  • broccoli cabbage (no more than 200 gr.);
  • 1 carrot;
  • 100 grams of champignons;
  • 1 clove of garlic;
  • 1 onion;
  • salt and pepper to taste;
  • wheat flour;
  • 2 cups of milk (medium fat) or 1.5 tbsp. cream
  • Bay leaf.

Cooking cream of celery soup in stages.

Make crackers in advance. Thanks to them, your celery soup will become more delicious and unusual.

For this recipe we need chicken stock. Cook the chicken in a pan with a capacity of at least 3-4 liters, then add salt, pepper to taste and 2 bay leaves. The chicken will cook for about an hour. During cooking, do not forget to remove the foam with a spoon. To check the readiness of the chicken, pierce the meat with a fork. When it is cooked, pull it onto a plate and remove the skin.

Cut 4 potatoes (medium size) in small slices, chop green celery (about 7 to 8 stems), celery root and broccoli (frozen can be). Throw chopped vegetables into boiling chicken broth and cook for 15-20 minutes over medium heat.

While the vegetables are being cooked, cut a medium-sized onion, 100 grams of mushrooms into slices, 1 clove of garlic and grate 1 carrot on a fine grater. Stew all these vegetables in a skillet or in a cauldron. When they are ready, add a tablespoon of flour (wheat). Stir the vegetables over low heat for 2 minutes.

Then you need to add to the vegetables 2 cups of milk (medium fat) or 1.5 cups of cream. When the mixture boils, carefully pour it into the chicken broth with vegetables. Celery soup must be cooked for about 5 minutes over low heat, stirring constantly.

After 5 minutes, turn off the soup and let it cool.

Now we need the help of a blender. We pass our celery soup (in whole or in part) through a blender, to a state of light mashed potatoes.

Now it is time to remember the chicken on which our broth was cooked. Cut about 300 grams of boiled meat from it and pass through a blender along with cream soup. Pour the resulting mass into a saucepan and cook again for 2 minutes over low heat. All this time, do not forget to stir the soup.

When serving, you can decorate the soup with parsley or dill. Put a few crackers on each plate - they will be a wonderful crunchy addition. Now you know how to make celery soup, which will pleasantly surprise you and your children.
